Milk = toasted almond coffee mate + water???

I decided to make banana bread tonight - one loaf for us and the other for our breeder. Well . . . I put in all the ingredients as I have a hundred other times. I'm down to "add 3 (doubled) tablespoons of milk". Easy enough, right?! WRONG - I'm completely out of milk, Ian is out working, and I can't leave this stuff sitting around the cats while I jaunter down to the store to get more milk. :? Sooo - I improvised. I added three tablespoons of my toasted almond coffee-mate creamer and three tablespoons water. :roll: I have no idea how it is going to turn out - but you can smell the toasted almond from the living room . . . 8O Wish me luck . . . :evil: :lol:

Hope it tastes fabulous! I love the smell of banana bread. You may have come up with something even better than your normal recipe. ;)

I've used evaporated milk to substitute milk before.
It will be fine!!! Nondairy creamers, including the powdered stuff, is used often in cooking during fast periods.
You were right - it turned out fine! It does carry a bit of "almond" flavoring, but oh well! :)
