Poppy Seed Chicken

This recipe is from my grandmother. I always wondered why it was called Poppy Seed Chicken when there are so few poppy seeds and they in fact can be eliminated altogether if you add other seasonings and spices.
This makes a lot!

3-4 lbs of chicken (white, dark, legs, breasts-doesn't matter- your choice)
2 cans cream of chicken soup
2-3 c cooked rice
1 c sour cream
1 sleeve ritz crackers, crushed
1 1/2 sticks butter, melted
2 tsp poppy seeds

Boil chicken (now is a good time to season). When cool cut into bite size pieces. Cook rice(I season this step too. But be careful that you don't get too much when you add it all together). Mix chicken, rice, sour cream, and soup and place in baking dish. Top with crushed ritz crackers. Pour melted butter on top. Sprinkle on poppy seeds. Bake at 325 for 30-40 minutes.

This is not a dish for those on a diet but it tastes wonderful. Serve with yellow squash and some fresh green beans-yum!!

You really can't tell I'm southern, can you? :D

I forsee a day off from my diet, yum!!
I've been wanting a copy of this recipe for years! I used to make it all the time and then, for some reason, I stopped making it and so much time passed, I forgot the ingredients.

Thanks, Jamie!! :D
Sounds good.
My husband makes chicken baked in cream of chicken soup and that is really yummy. We are going to have to try this.

I guaruntee this will become one of his favorite dishes!

I forgot to add that the cream of chicken soup can be substituted-my grandmother likes to use cream of mushroom. I don't like mushrooms and I like the extra chickenyness of cream of chicken.
