Aacck!!! Sticky mints!!!

Ok,

Well I went to do my first shower food last night. I made the cream cheese mints. They went into the super cute teapot themed rigid plastic molds, I put them in the freezer last night, went to pop them out this morning and....

OH NO! THEY WON'T COME OUT!!!!

I didn't grease the molds or sugar coat the mints or anything. I figured once they were frozen stiff they would just pop out. :cry: THEY DIDN'T! :evil: So I scraped them out, and put them back in the mint dough bowl for round 2.

How do I prepare them mints and or molds this time around so that they come out smoothly???

By the way... I just had to "SAMPLE" one of the wrecked mints, and they're wonderful dahling!!!

Now if I can only get them to come out of the molds properly, I'll be set!

Did you try dipping the bottom of the mold in warm water for a few seconds? Sometimes that works when you are trying to get cold things out of molds...
I did. It just made the mints warm and sticky again...

Last time I did these I used a flexible mold, but they didn't have those in teapot shape, so I'm using these rigid ones. Geeze- shouldn't be this hard, should it?
hmmmm...can you line the mold with plastic wrap?
Maybe.... I'm not sure I would get the design transfer though- All the teapots have little flowers on the front... I wonder if they would look krinkly? That's worth a shot though... The nice thing with mint dough- if it doesn't work, scrape it out and try again!
if they get crinkley, just dab a small pastry brush in some water and smooth out.....
Darce- that's not gonna dissolve the mint, will it???

It'd still be nice if I could just pop the mint right outta the mold :evil:
have you tried turning the mold upside down and banging on it as hard as you can :twisted:

What (generally) are the mints made of?
Yep yep- did the banging, did the banging with a tool too. even rapped on each mint individually.

My mint recipe is melted butter, evaporated milk, confectioners sugar, mint flavoring and food coloring. You can also make them with cream cheese, instead of the milk/butter combo.
What about spraying pam then LIGHTLY flour the pan.....
Karen, I read somewhere they if you are making buttercream mints (which this is what it sounds like)...you are supposed to put the mint mixture into the mold and put it in the freezer for 5 or so minutes...and then pop them out and store them in the fridge (or freezer)...maybe they settled in too much since you left it overnight?
I'm thinking about that- maybe using powdered sugar instead of flour, since it is sweet...
