HELP!! Need salad recipe for 150 people

Doug just "informed me" that he volunteered my services" to make some kind of salad for his nephews graduation party on 5/20 :excited:

Anybody have a good recipe for a LARGE quantity salad. I hate to make teh "usual macaroni or potato".

I've never considered mac or potato salads actual salads.....just big carbo hits. Are you looking for a true vegetable or fruit type salad? Or just something cheap and easy :wink:
Well, for that many people vegies are most likely cheaper!! Given the cost of fruit these days I'd have to take out a second mortgagee!!!!
boy, that's true!! Also I'm not keen on any salad using mayo for a crowd...spooky.

two ideas quickly gleened from Chefs.com

Bean salad.....but with apricot preserve and cinder vinegar dressing.

and

2 potato salad: white and sweet potatoes with a vinegrette dressing and a dash of sweet gherkins for those expecting the pickle taste.
They are youngsters... how about a Pasta salad.. that should cut down on the cost... I think it would be less than potato salad? Maybe about the same?

Put it into a watermelon bowl and they'll THINK they're getting fruit salad, won't they? :lol:

Point is, kids don't care much about the salad thingy. Be glad you're not in charge of the wings!

ACtually, I pretty much ONLY ate salad in high school....

What about a Caesar salad? You just buy a few big bags of lettuce from Costco and a few boxes of croutons, pour on some parmessan cheese and a couple of bottles of store bought dressing...

chopped cilantro

lime juice

mutiply recipe for correct amount...this serves about 6 side helpings

My MIL makes this, and it's always delicious. It's fairly cheap to make too, but it's a fruit salad.

MIL's fruit salad

Ingredients:
1 can peach pie filling
1 can mandarin oranges
1 can pineapple tidbits
1 pkg. frozen strawberries
2-3 bananas, sliced

Directions:
Defrost strawberries. Drain oranges & pineappleas. Mix all ingredients together. That's it :)

Number Of Servings:8-10

Darcy, that wild rice salad sounds good! I love wild rice.

I was just thinking that a lettuce-y salad would be good because it would be lighter to bring...can you imagine how heavy a bean salad for 150 would be to carry!

Personally I'd rather make 4 or 5 different salads in smaller quantities and have more of a selection!!!

The rice does sound good.
Well, here's a new "salad" recipe that was shared on my Mommy forum board today. :)

Not sure what I think about this combo - lol She promised it was delicious though. It at least makes it sound healthier since it has the word salad in it. :wink:

SNICKERS® SALAD

6 SNICKERS® candy bars, chopped in sm. squares
6 Granny Smith green apples, chopped in sm. pieces
1 (8 oz.) container Cool Whip

Mix and chill. Enjoy as salad or dessert.
Sounds good but for 150??? That's alot of snickers bars!!!!!!!! But it would be a good desert for home!!!!!!!!!!

Ginny, to help you determine portion amount for that many people go to any food service place like GFS or Sysco, they have all kinds of charts with the info on them. They also have lots of ideas for salads. Depending on the rest of the menu how about black bean salad? Black beans, corn, cilantro, etc, cheap and easy.

I found an great web site that has all kinds of recipes, you enter the number of people you want to serve and it automatically adjusts the ingredient list, it's great. I have book marked it at work. Next week I'll post it.

Maybe you lose track in the multiplication!! I tride to make instant potatos last night and multiply the servings on the box, got my numbers confused and ended up with enough mashed potatos to feed a third world nation :oops:

I think that's mostly for baking, doubling ingredients don't work well for that. Some amounts would stay the same and some would double, like making a 1lb or 2 lb loaf of bread, if it had eggs the amount is generally the same for both sizes.
Just an update....... I just finished making Italian pasta salad for 150 in case anyone is interested the ingredients were:

8lbs Rigatoni
4 lbs of mozerella cheese
4 lbs of pepperoni
4 bunches of broccoli
3 LARGE red onions
1 Bunch of celery chopped
4 lbs baby carrotts cut small
3 Green peppers
3 Red peppers
3 cans of olives sliced
6 cups Cannola oil
2 cups of lemon juice
2 cups red wine vinegar
1 cup minced garlic
1/4 oregano

I mixed everything but the pasta last night and let it sit in the fridge overnight. This morning I cooked and cooled th pasta, mixed and we are off!! The above filled 4 Turkey Roasting pans :)

Wow...now that is a BIG pasta salad.
Also I am sure not everyone will eat it. So it should be enough.

My hubby was appointed the job of cooking BBQ chicken for 40 people next weekend at our Great Nephew's 1st Birthday Party. My SIL really pisses me off. I am sure the only reason she invites us over to her house is for Billy to cook. I have never seen her make anything besides salads. :roll:
hey, it has pepperoni, how bad can it be? Gee, I haven't had pepperoni in years.......................yum. Good recipe, I'm sure everyone enjoyed it.

It was quite tastey, I must admit pepperoni is not a food I usually buy (not bery heart smart) but hey ya gotta splurge once in a while!!!

LEFTOVERS????? HA! There were well over 200 people!!!!!!!!!! The party was to celebrate Doug's nephew graduating from Cornell and also to celebrate the life of his sister (Doug's sister the graduates Mother) who died last April after a bone marrow transplant. I was concerned that the joy of his nephews accomlishment would be overshadowed by the sadness of her death but it was really a very "fitting event", a real celebration of both events.

I didn't mention it last year when it happened because it was really just to painful and difficult but she was an amazing person and he is an amazing boy! His last two years of school were very hard because of his Mother's illness and death but he made it and we are all sooooooooo proud of him :lol: :lol:

As the "official photographer" I took over 100 pics, I'll post one or two when I get them downloaded :D
