Pineapple Angel Food Cake

Angel food cakes are naturally low in fat. This one is made special with the addition of pineapple.

INGREDIENTS:

One 14.5 ounce angel food cake mix
One 15-1/4 ounce can of crushed pineapple, in juice

PREPARATION:

Mix dry cake mix and pineapple with its juice together. Don't be surprised when it gets foamy. Pour into an ungreased 13x9 pan. . Bake in preheated 350 oven for about 20 minutes or until golden and springs back when touched in middle.

That is a great recipe! When I was on Weight Watchers, that was a staple in my house.

Its really delicious! Top with a spoon of fat free Cool Whip and YUMMY, YUM, YUM!!!!!!!!!!!!!!!!!!!!!!!!!!
That sounds yummy. Good spring-time dessert. Add a glaze and fresh fruit for garnish. Of course husband would want some sherbert with that too.

PINEAPPLE COCONUT GRANOLA
White Barn Inn KBC, Maine
4 cups unsweetened bran flakes
2 cups rolled oats
2 cups sliced unsalted almonds
11/2 cups sweetened coconut
1 cup well-drained crushed pineapple
1/2 cup honey
preheat oven to 200
in a very large bowl, combine all the ingredients & mix well.
Transfer the mixture to two baking sheets & bake 20min.
Then stir the granola & open the oven door by about 6 inches.
continue baking with the door ajar for 1 hour more, stirring every 20 min.
the granola is done when no longer damp but slightly chewy.
remove granola from the oven & cool on the baking sheets.
transfer to an airtight container, where it can be stored at room temperature for up to 10 days.

PS You can add dried cranberries or other dried fruit if desired

I love pineapples esp. when I was pregnant. Ate a can a day ...but then again, was also told it helps you go into labor so I may have had some other reasons (or wishful thinking).
