I've decided to serve beef tenderloin for Easter. There will be 5 of us. Do I figure half a pound per person? What would be a good potato dish? I'm thinking of making the hash brown potatoes with the sour cream and cheese. Any other ideas?
Should I marinate the tenderloin overnight? If so, any suggestions as to what to put in the marinade?
Dessert is easy. Napoleons. |

| I don't know if you have a liquid rub called Kitchen Bouquet or not, but it is a wonderful rub for just about anything. I like to use it on pork tenderloin. |
