I've decided to serve beef tenderloin for Easter. There will be 5 of us. Do I figure half a pound per person? What would be a good potato dish? I'm thinking of making the hash brown potatoes with the sour cream and cheese. Any other ideas?

Should I marinate the tenderloin overnight? If so, any suggestions as to what to put in the marinade?

Dessert is easy. Napoleons.
are you cooking the whole tenderloin? or cut into steaks? I dont like the beef tenderloin marinated, but a dry rub would be nice......
The whole tenderloin. A dry rub would be good. Gimme your recipes!
follow the directions on the package for tenderloin it should tell you how long per pound....

dry rub...

garlic powder
salt
pepper(freshly ground)
oregano
red pepper flakes
onion powder
I don't know if you have a liquid rub called Kitchen Bouquet or not, but it is a wonderful rub for just about anything. I like to use it on pork tenderloin.
