Meals to travel

OK, guys, put on your thinking cap. A friend has been diagnosed with terminal cancer. Over these next few weeks her family will be visiting --one group every week for a number of weeks. We here in town would like to help with the food that will be needed. Ideas please! However, her husband has severe heart condition and diabetes, so no fat, salt, sugar. Also something that will last a few days, freeze well would help.

I don't know if I have the right oes member, but I think Iriskmj started a thread just like this several months ago. I can't find it, but maybe someone else can. It had several recipes and ideas that I thought were great and would be perfect here.
I found it....way back on page 5, but the recipes were pretty high in fat. The hamburger stew wasn't bad if I get all no salt items. (blech)

oh sorry! :) Well, I know everyone here won't let you down with some other ideas.
Sheepieboss--If you go to the Valentine's Day recipe thread I have a recipe for lasagna that is good and if you substitute the turkey sausage for 99% lean ground turkey and use lowfat (or lower fat) cheese, then the recipe is super healthy.

Also, what about chile? That lasts a while and doesn't have to have any fat in it.

Another meal that I like:

Chicken mushroom bake

4 boneless skinless chicken breasts, cubed
1 pound mushrooms, sliced roughly
1/2 onion, chopped
1 garlic clove, minced
2 celery sticks, sliced
1 package frozen spinach, thawed
1 can Healthy Choice Cream of Mushroom soup
1 can reduced sodium chicken broth

Preheat oven to 350.

In skillet, spray with pam and add onions and chicken and saute until almost done (not pink). Add the garlic, mushrooms, celery. Saute until getting wilted (about 3 minutes). Add the Cream of Mushroom soup, frozen spinach and as much chicken broth to make a little less thick.

Pour into casserole dish. Bake (covered) for 20 minutes. If you want to add some lowfat mozarella or parmesan cheese, uncover and put cheese, then put back in oven for 5 minutes.
