Spicy Chicken in Peanut Sauce

1 T. olive oil
4 large chicken breast
1 large onion, chopped
2 cans (14.5 oz. each) diced tomatoes with green chillies, undrained
2 cans (14.5 oz. each) crushed tomatoes, undrained
2 T. honey
1 1/2 t. ground cumin
1 t. ground cinnamon
1/3 c. creamy peanut butter
1/4 c. chopped peanuts

pasta, couscous, rice or ramen noodles

1. Heat oil in skillet, brown chicken
2. In slow cooker, mix onion, diced and crushed tomatoes, honey, cumin and cinnamon, then add chicken.
3. Cover and cook on Low heat for 7 -8 hours
4. Stir in peanut butter until melted and well blended.
5. Serve over pasta (or other choice) and top with chopped nuts.
