San Diego beach fare

Okay, as you all know....Brian and I are leaving for vacation....Yeah!!!!

I need to come up with lets say 5 EASY and Quick recipes that I can make ....now you have to remember...Im only bringing the necessities...garlic, salt and pepper, oil....and also since most of the time is on the beach soaking up the sun, I dont want to spend hours cooking...I need anything that will go with beer, wine and/or margarita's

yes.....and val...you get yourself there...youre invited!!
Darcy--If you like fish, then swordfish, wild alaskan salmon, black sea bass and some others are in season right now and aren't (quite!) as expensive as they can be at other time of the year. All perfect for the grill--just add salt, pepper and grill until done. Then add lemon or salsa to top the fish.

Grilled chicken pasta salad is always good--just grill the chicken and some veggies (red peppers, red onions, zucchini, etc) and then toss with pasta and your favorite dressing. It is cool and quick and easy.

Anything grilled.

Couscous is always good--just pour the boiling water into the mix and it takes like 10 minutes.

Grilled fish tacos...

Anything Mexican food-y, since you're out there...

Yum, I want to go home!
Fajitas: grilled steak, chicken, vegetables, fish, cheese. Anything good tastes better in a lightly grilled flour or corn tortilla. Even scrambled eggs for breakfast, I like them with cream cheese and chives, but whatever you like in your omlettes works. Leftovers from the great fish suggestions that barney1 made. Add some lemon juice and cilanto and you have a meal.
oh gee whiz: margaritas, fajitas.............what's not to love??

One idea is to throw an extra marinated steak on the grill (big size). Chill it over nite and slice real thin next day and throw into a mixed green salad. Now my choice would not be steak, but a butterflied leg of lamb, but that takes Ft. Knox money these days. And no way it would survive to the next day!

Bean salads........no not that one! Something with a better bean mix...garbanzos and black beans (rinsed of course), onion and dressing of choice. Keeps for days.

Has anyone done the Johnsonville brat recipe on TV? Boil brats in beer and onion and then finish on grill?

Remember lots of fruit since alcohol depletes the body's water.
We've done the Brats in beer, then grilled thing. My husband says they're good--I don't eat that sort of thing.

Yep, I'd basically say anything on the grill. Fajitas--there's a lot of chopping.

You could marinate a flank steak (borrowing from sheepieboss' idea)...

All sorts of salads. They have such good produce out there, so take advantage of it. I thought that since I was moving to a rural location I would have amazing produce, but no, it sucks. They advertise these 'special' tomatoes that they grow out here, and I like the vine ripened mass produced tomatoes better than them!
all good ideas...I completely forgot about fajitas....duhh......the cold meat salad sounds really good....Id do lamb too, but Brian hates it ...says that it is too "gamey"...just more for me.......lol.....thanks all.....if anyone is in the neighborhood, pop on by....Brian will make the marg's and we can all enjoy the sun setting over the pacific ocean......
Well, yeah, lamb is gamey if you eat old mutton or eat the fat! Old family trick with a leg of lamb, remove the fat before roasting.

If you want to train him to eat lamb, start with mixing lamb with ground beef whem making hamburgers. A little shoulder steak's worth of lamb (no fat) to at least a pound of gb will be a good start. At State Fair the lamb wagon had a long long line of people waiting for lambburgers........that was 100% lamb. Great, I'm salivating.........

mmmmmmm, I love lamb...I make mean lambchops!!! I love lamb burgers.....I cant get anything past brian food wise.....he's that picky...oh well, like I said...more for me!!!
Or, if you make shepherd's pie mix ground lamb and ground beef. I have a great Rachel Ray 30 minute shepherd's pie recipe.
I haven't had Shepherd's Pie in years.
