Chocolate Cheese Fudge Recipe

Here's the recipe for the Chocolate Cheese Fudge I mentioned in the Quit Smoking section.

To give credit where it's due, this recipe comes from Paula Deen's Just Desserts cookbook. I love her cooking show!

1/2 pound Velveeta cheese, sliced
1 cup (2 sticks) butter
1 teaspoon pure vanilla extract
1 cup chopped nuts
2 16 oz. boxes confectioners' sugar
1/2 cup cocoa

Spray lightly the bottom of a 9x2 inch square pan with a nonstick spray.
Over medium heat, in a saucepan, melt cheese and butter together, stirring constantly until smooth. Remove from heat. Add vanilla and nuts. In a large bowl, sift together sugar and cocoa. Pour chees mixture into sugar-cocoa mixtuer, stirring until completely mixed. Candy will be very stiff. I find it's easier to do the final mixing with my hands.
Using your hands, remove candy from bowl and press evenly and firmly into pan. Because of the amount of butter in this recipe (which you must use), I like to pat the top of the candy with a paper towel to remove excess oil. Refrigerate until firm - about 30 minutes. Cut into squares.

Well heck Tammy, all you had to say was it was from Paula Dean...I love, love, love her food...Im addicted to her show...Have you seen the kitchen remodel that she did for that couple? The only thing I didnt like was the fish tank....I just dont want one in my kitchen...but it was beautiful, and it gives me ideas for other kitchens that I do......
I can't believe there is a show of her's I've missed! I'm a huge fan, too. I TiVo her show, so I'm shocked that I've missed one. 8O

I have all her cookbooks and went to her restaurant last fall when my best friend & I did our "Girlfriend's Getaway" in Savannah. So cool! :D
Is that where she is? My twin is moving there in a few months, hopefully, We'll spend our birthday together there!!! Where is her resturant? Poor Lisa, she says its beautiful, but the nearest Target and mall are 35 miles away... Tom will be saving some money..lol..
Yes, she's in Savannah, GA. Not sure where your Sis is moving, but I know there's a great mall and Target in Savannah because I wouldn't miss stopping at either of those! :lol:

The Lady & Sons restaurant is on Congress Street -in the downtown historic district - just a few blocks from the Riverwalk.

Savannah is a beautiful and charming city. I'm jealous of your sister! :D
They live in Franklin Tn right now, and Tom is being transfered to one of the Marriots on the ocean...I know it overlooks the water, I just dont know where...she's really upset because the taxes there are horrific and the house prices for what they have now are like 600+. They are out there looking right now...maybe if I go out in Nov. we can get together at Paulas resturant for lunch....we love historic downtowns....ANTIQUE SHOPPING...yeah!!!
I imagine it is pretty expensive to live in that area. But you will enjoy visiting your sister!!
Paula recently made "somebody's fried chicken with honey-pecan sauce." After the chicken was fried, she combined a ton of melted butter with honey and pecans, heated the mixture and poured it over the chicken. She said "I don't want any of you to write to tell me I made a fattening dish even fatter.!" She's my favorite on FoodTV and not just cuz of her name.
I saw that episode, too, Paula. That pecan fried chicken looked good...but HURRAY - the calories!! :D
Before any of y'all rush out to try this recipe, this is my opinion.
The recipe is quick and easy. That's really about all I can say as a recommendation.
It's not very chocolatey at all and has an overpresence of powdered sugar. The texture is ok, but not the smooth, velvety texture I like in a fudge.
Now, if you want REAL GOOD cheese fudge, try any little roadside cheese shop in Wisconsin. To die for!
On a scale of 1-5, this one gets a 1.
Phew! Thanks for the warning. Don't want to waste cocoa! Maybe use melted bittersweet bar or 70% bar instead. Guess I've having trouble getting by the cheese...........

Darcy, yes, I loved the kitchen redo, except the fish tank too! What 8O maybe keep live lobsters instead. No thanks, I could put some nifty appliance in there like a Star Trek food replicator for when I don't want to cook.
I wanna know if Guest has a better recipe that he/she would please share with us unlucky ones who live 1,000+ miles away from Wisconsin!
Actually, I'm working on it.
I think replacing some of the butter and all of the cocoa with baking chocolate would be a major improvement.
But I'll be trying out some things in the kitchen this week and will be happy to let y'all know if I have a breakthrough.
BTW, I shared the fudge with some co-workers. Some liked it, some thought it was incredible that there was actually CHEESE in it, and several agreed with me that it was seriously chocolate-deficient.
And my husband, who's a much better cook than I said "this is supposed to be CHOCOLATE fudge??"
