Blue Cheese Roasted Potatoes
Preheat oven to 400 degrees. Wash 3 pounds of red potatoes. Cut them into quarters or smaller - the larger they are, the longer they take to cook. Put them in a baking dish. Add 6 cloves of minced garlic, 1/2 cup of chopped rosemary. salt and pepper to taste. Drizzle with olive oil (just enough to lightly cover the potatoes). Mix the whole thing so that the rosemary and galic are well distributed and all potatoes are covered with olive oil. Place the uncovered baking dish on a middle rack in the 400 degree oven. The goal is to have the potatoes crispy on the outside and soft on the inside. It takes about an hour. Once the potatoes are crispy, take the baking dish out of the oven. Sprinkle with crumbled Blue Cheese. We love cheese, so we'll use 6 or 8 ounces. Put the baking dish back in the oven for 3-5 minutes just to melt the cheese. Mmmmmm! Enjoy! |

| Even before the cheese I knew it would be good.....it's an "old family recipe" but adding the blue cheese blew it over the top!
Saw blue cheese chunks in olive oil today at the store. Anyone use this? |
| Never used that before, we always have a container of the blue cheese chunks on hand for salads. Let me know how it is! |
