Yummy chicken breasts Simple and quick.

4 boneless, skinless chicken breasts ( season well )
2 tbsps olive oil
1/4 cup grainy dijon mustard
2/3 cup dry white wine or substitute chicken broth
2 tsps soy sauce
1 cup heavy cream

Put oil in a heavy bottomed frying pan and heat to medium. Season chicken breasts well with salt and pepper and any herbs you prefer. I sometimes add italian seasonings or tarragon and garlic but use any or none whatever you like. Lightly brown the breasts for about 4 minutes per side . Stir together mustard ,soy sauce and wine add to the chicken breasts and cook at a simmer for 10 minutes .Stir in cream and simmer for another 5 minutes.
Set oven for 350. Place chicken mixture in a casserole dish and cook for 20 minutes. Half way through spoon sauce over chicken to baste. Serve with rice or new potatoes or quinoa and a salad .Yummy.

simple and sounds yummy! I'm rewriting our church cook book so this sounds great after a day or Greek stuff.
