Induction stovetop?

We are renovating our whole house. :headbang: It will be wonderful when it is done, but gosh I am going bonkers doing research!

Anyone know anything about induction stovetops? Pros, cons, and recommended brands ?

I am an old school girl that grew up with gas, not sure if I am ready for this new technology !

Help!
p.s. The dogs are loving all the attention they get from the workmen.

I don't know much about induction stovetops, I just know I love gas stoves and I hated the electric one we used to have soooo much. I will never have a non-gas stovetap.
I'm hoping to go induction on my new house.
It's SO cool!!

It doesn't use heat to heat the pan, which would in turn heat the contents of the pan.

It magnetically excites the molecules in the pan. If you remember your high school science, the slower the molecules are moving in matter, the lower the temperature; the faster they move, the higher the temp.
So the stove excites the molecules in the pan, which releases energy in the form of heat. That heat is transferred to the contents of the pan.

Some of the benefits include a MUCH more controllable "temperature" range. You can cook delicate sauces on an induction cooktop or boil water in 90 seconds!! Another benefit is that the cooktop NEVER gets hot. That's because it doesn't use heat. You can boil a pot of water, remove it from the top, and put your hand right on the element and you won't get burned. And if something boils over or spills on the top while using it, it won't burn onto the top like a conventional glass cooktop. Easy cleanup.

I think there's only one downfall. And that is you can't use aluminum or copper or ceramic or any other non-ferretic pan. If the pan is not magnetic, it won't work. Oh, and the cost. They are more money compared to a traditional electric ceramic cooktop. But not much more, and it seems their prices are dropping every day.

I was 50:50 on gas or induction last summer when we redid the kitchen. I had gas and frankly didn't want to change. Everyone thought I was nuts except one contractor who sided with me. I had the wall fitted for both gas and electric as I still didn't have my mind made up until near end. I went with gas based on cost of units. Induction was going to be at least 2x cost of gas. I splurged on a couple of other appliances and couldn't justify $800 more since I was wishy-washy anyway.

Second was the glass top. I don't like glass tops. I'm a messy cook and have suffered with glass stops before. Give me stainless and I'm happy.

But if in your budget: Induction gives you the instant heat control of gas.....you can't see the flame as there isn't one. You do need ferrous cookware--has to have steel in it. No aluminium or glass. I had a few stainless steel and of course cast iron, but a lot was still aluminium.....held on to mainly for memories. Corningware on the stove, out. There will be heat transfer to the glass when cooking....from the pot. But if the unit in on, you can put your hand directly onto it without problem.....unless you are wearing stainless steel jewlery. Yes, Kitty could walk across.

If you are used to glass tops, have the flat metal pans and the extra cost......go for it.

Sorry, not a true cat lover here. If there was a kitty on my stove, he would deserve burnt paws! :twisted:

I have two cats here and an electric stove would be a real problem for us because I feed my cats on the kitchen counter so that the dogs can't eat their food! We have to clean our counters a lot though. We have had the cat step on the electric stove at my parents' house before, not fun.

I never even considered that a concern since mine aren't allowed on the counters, but I see your concern snazzierella. You do what you got to do! We keep our food bowls on the bathroom counter. Our new house the laundry room that will be big enough there ...finally... to keep it in there. We're putting in an additional door just so the laundry room connects into our room. I don't let the cats roam at night so I lock them up, but I can't go without one of them sleeping with me. She's my snug bug. Once I get into bed, she immediately comes and asks me to lift the covers so she can get under my armpit area. Amazing what we do for them because if I move in the middle of the night, she slaps me to get me to stop. I'm pretty whipped
