Deana, I would think you could eat a lot of high calorie, healthy food. Peanut butter and almonds would be great. They have good fats, but have a decent amount of calories in them. I know a vegan friend who ate a lot of peanut butter and banana sandwiches to get her weight up.

Rice would be a good filler too.
Eat smaller amounts more often and do some weight training, just small weights. And make sure to drink water, it helps every system work better.
Considering what we know about you esp the recipes you like... I'd think you were eating very good (hardy) meals! :) So my only suggestion is the same you'd give someone who was trying to LOSE weight. Exercise ...except instead of running, you probably would gain from adding muscle mass.
My Dad was underweight all his life...military doctors told him to drink beer/milkshakes. Milk will put on weight and might be easier to keep down. I couldn't drink beer as I don't like the taste...I'm thinking fruit cobblers, ice cream, milkshakes, potato chips...all those things that make us fat.
Let's trade metabolisms, I think being underweight might be a novel experience!

Maybe you need to start doing what dieters have done for years, start counting your calories, fats, carbs, etc. Also you need to know your target number. There are many sites on the Web that will tell you how many calories, carbs, etc you need to "maintain" (or in your case, get to) your weight. If you are there, add 15%

Then start meal planning and keeping track. There are programs on the Web that help with that as well, some free, some for pay.

Chronic illness does make it difficult to gain weight.........I had a friend who was 5'10 and weighed 107. We looked like Mutt and Jeff together (ever try to find clothes in size 0 tall?). She could not gain weight and tried eating all the bad stuff......and lost more weight. She was diagnosed with a disease. Once that came under control, weight returned.

OK, with your "numbers" in hand, avoid junk foods for those extra calories. No trans fats or saturated fats. Look to omega 3 fatty acid sources like oily fish: tuna, salmon also walnuts, almonds. Try using flax seed sprinkled on "everything." Eat plenty of fruits, veggies and whole grains...brown rice for example.

You mentioned you have trouble keeping things down, how about 6 smaller meals instead of 2 or 3 large ones?

Ensure and other nutritional supplements might help, but often the fill one up so you want to skip the next meal.

Try resistance training such as weight lifting instead of aerobic exercise which tends to work to eliminate fat. Anything that will build muscle is the main idea.

Avoid empty calories such as soda, drink fruit juice, milk, etc.
My husband has always been on the leaner side & tall, he has always wanted to 'bulk' up. We noticed that when he started to run (no more than 10 km) a few times a week, he actually gained weight, 15 lbs in a year! Not sure why this is, he may have been eating more than before. He was thrilled, me not so much because he needed a new wardrobe!

For me it would be nice to not to struggle to lose weight, but I understand it can be just as difficult & frustrating to gain weight for some folks.

After an illness my father needed to gain weight--the nutritionist that worked with him did recommend Ensure and two to three milkshakes a day. I think someone mentioned this already. He was to drink Ensure with each meal not use it as a meal. He also had trouble keeping his food down so he would eat more often. They also recommended that he eat red meat at least four times a week. He liked cakes of any kind so we always made sure he had a cake every week too. He was able to eat all the good stuff and as much as he wanted. They did recommend that he track his calories--I don't remember the number but he was to eat that number of calories daily. He did gain about 18 lbs in two months with this plan.
Deana, I was just in this situation too. I also didn't want to eat junk to gain it either. It took almost a year, but i've finally gained the 10 pounds that I was aiming for. What I did was make sure to eat lots of good fat...eat lots of avocado...lots of cheese and try to get some good carbs in. I also ate more than I was comfortable with. Instead of stopping where I normally would have, I kept going a couple more bites. Not a whole lot more, but just a bit, but I can see how that could be a problem if you're having trouble keeping things down. I also ate cookies and brownies!

I hope you can gain a little weight. It'll make you feel better...it made me feel better anyway.
I was just in this situation as well. My body fat percentage was below that of a healthy female. I started having side effects, so I went to a personal trainer who cooked 5 meals a day for me and gave me resistance exercises to do. The goal was to gain muscle, not fat. I'm an avid marathon runner, so it was hard to gain anything at all. Each of my meals were high in protein, low in fat, and low in sodium. I ate a lot of seafood, chicken, turkey bacon, and eggs. Beef was offered at least twice a week and spinach salad every day to boost the iron intake. They would also add protein powder in any cookies, cakes, pancakes, eggs, or pizza they made. Just as others mentioned, spread meals out throughout the day; breakfast, mid-morning snack, lunch, afternoon snack, then dinner. I also ate 1.5 ounces of nuts a day just for the extra calories. I gained a few pounds of muscle over the course of 4 months, however now that I'm off the diet I've dropped down again. I'll gain some over the winter as my miles drop.

I understand your problem though, and I do sympathize with you. The problems that arise with being too skinny are not fun and can be just down right embarrassing at times. PM me if you want more info. I'm a food scientist, so I know a lot about nutrition  !
I 'm 5' 3" and was 104 lbs for about 50 years . I love banana and peanut butter along with potatoes, gravy, cookies, chocolate bars etc. then a couple of years ago I developed thyroid problems and I went down to 89, A nurse told me to try Boost with extra calories, I'm now back to 99 lbs :D
