Greens

Does anybody have any good recipes for greens?
I went to the farmers market today, and bought some kale, collard greens and some beets, which I cut the tops off of.

Normally I justs saute them in olive oil.

I always saute them with onion in bacon grease :oops: :oops: :oops: Yes, I know....

Then, I remove from the skillet, add a bit of vinegar and sugar to the pan, reduce and pour over the greens... yum.

Lori it sounds like what we used to call wilted lettuce.
I'll have to try that.

I've sauteed garlic in sesame oil and then added greens to that. Yummy. It has a darker, nuttier flavour. Maybe some slivered almonds over top?

Yep-- very much the same thing. I like it better than the letuce, because the greens seem to hold up better that the leaf lettuce. Yum!
