Peach and Mozzarella salad Recipe

I bought some peaches at the farmers market today. I wanted something different to do with them and found this recipe. It was very good. Hubby enjoyed it also.

3 peaches peeled or not
1 cup basil leaves.
8ozs mozzarella cut into pieces
olive oil (I just drizzled until I thought I had enough)
salt and pepper

Put everything in a bowl and toss. Serve at room temperature or serve cold.

It was very refreshing.

I like all the ingredients, but I don't know if I'd like them all together. Was this sweet?
I thought it was a really weird combination myself.
I didn't do the pepper and very little salt. It wasn't really sweet. The peaches were still kind of hard not extremely ripe. The basil almost gave it a anise flavor. No it wasn't really sweet either.

We almost like it more than the caprese salad.

you could grill the peaches too.....
mmmm, that would be good to grill them!

There's a good recipe in the latest Cooking Light magazine that has a peach and chicken quesadilla that reminds me of this recipe.
