Tell me what to make for dinner please :)

I have 2 defrosted chicken breasts, and pretty much all the general pantry staples and some assorted veggies. Help me out, y'all. And make it somewhat healthy, too! :clappurple:

chicken kabobs!! marinate the chicken in lemon juice, olive oil, garlic, s and p...

veggies on one stick...onion, bell pepper, mushrooms

wild rice with some scallions in it....
my new fave, is a new king ranch casserole recipe but that's definitely not healthy. just easy and since it has tortilla chips ...the kids will nibble on it.

when i'm in a hurry, i always make artichoke chicken or my cheesy honey mustard recipe i've posted. :) well, another one we do regularly and i have no time is enchiladas since it's just mix just a few ingred, roll in tortillas, and bake.
I had this great pasta dish at a restaurant and I am going to try and copy it tonight. It had bowtie pasta, artichoacks, spinach, kalamata olives and grilled chicken in a olive oil and white wine sauce. It was very good and light.
Chicken picatta. Pound chicken into cutlets. Dredge in flour that has salt and pepepr in it. Quickly saute until golden. Remove from pan. Add a little butter to the pan and add in flour to make a roux. Once you have the roux, add a little chicken stock and white wine. Boil until thickened. Add in fresh lemon juice and capers. Pour over chicken. Serve with angel hair pasta.
Poach the chicken then cool it while preping lettuce, orange wedges, almonds or walnuts, strawberries. Dressing is strawberry syrup (yeah, I'm sure you have it :lol: )with vinegar.......or whatever light dressing.....orange vinegrette......you can come up with.

Grapes instead of strawberries? Just a thought.

I stopped at Chipotle after work and agility class - had a nice outdoor patio dinner with Chewie and a friend who stopped by too. :D
Since you were already out, makes perfect sense to take your best man out to dinner.

I'm stuck at home with an icky cold. No desire to shop or cook. Living on fruit salad for dinner.
So....

Made leftover chicken for the kid and a frozen pizza for hubby.

If I starting defrosting the chicken (just took it from freezer to a pan in the fridge) on Monday at noon, and now it'll be Wednesday night, is that chicken still okay to eat? Has it been defrosted too long?
If not, I'm marinating it in olive oil lemon, salt and pepper and making a quinoa salad with feta, yellow pepper, lemon juice and cherry tomatoes.
Oh no! At least in my book. After it defrosts, I've still wait until the 2nd day to cook it if I needed to (so that's 3 days in the fridge)!!! If the chicken has been in the freezer forever though, I use it no later than the day after it defrosts.
Balsamic Chicken... just cook the chicken with some salt, pepper and garlic and then put the sauce on it, soooo yummy...

Sauce:

1/2 cup balsamic vinaigrette
1tsp garlic paste
1tsp pesto
heat and then add about 1/3 cup of heavy cream.... yum

I usually make long grain wild rice and broccoli to go with it.
If it's been in the frig, it's fine. Just make sure you cook it completely.
