Need recipe for make ahead sandwich for 8

We are having a "work retreat" which is potluck and I was the last to get the sign-up sheet. Of course a main dish is lacking :roll: so I was thinking of bringing a sandwich to serve 8 that I could make the night before. That won't cost an arm and a leg. I would love to bring a muffaletta sandwich but that would cost my paycheck!

And I'm leaning towards veggie (including cheese).

Any suggestions?

I don't know what else is on the menu - would a sub sandwich work? Get a loaf of bread the right size and build your own? You could vary the ingredients down the loaf to cater to a few different tastes.
Funny, muffaletta was my first thought!

Making sandwiches ahead you risk the break getting soggy unless you seal it with butter (or some such first, before adding anything juicy.

How about making a spread ahead and then slapping together 8 sandwiches at the event?

Chicken Sunflower Spread...so nut lovers won't be affected Makes about 8-10 servings

24 ounces chicken, tuna or salmon.....your choice
1 cup mayo
4 Tb. honey dijon mustard...or make your own using dijon and a dab of honey
2 red bell peppers diced fine
4 scallions (more if desired...I desire)
2 teaspoons dry thyme...or 1 1/2 Tablespoon fresh, minced
pepper.....oh about that much 1/4 t?
1 cup of sunflower seeds, shelled and salted.

Bread of choice. Or pitas??
I do this quite often for family gatherings----

I use a round loaf of whatever looks good at the time ( my preference is round rye, but a nice wheat or whole grain works well too) . I slice it in half length wise, and , depending on how thick it is I may take an additional bit off to make it "thinner" . Spread both sides with butter ( won't sog if you do this) and then fill with a great corned beef , baby swiss and dill relish. I "layer" the sandwich, so when cut in pie like wedges, is looks really pretty. I have also done turkey with bacon, cheese, tomatoes....

You mentioned veggies--- you could really stack a pretty sandwich with the "drier" vegetables, and when cut would be a nice and hearty. Sprouts, cucs, peppers, even olives and pickles would be good-- maybe with a nice cream cheese spread. Just some ideas. Now I am hungry. :)

They all sound good, but I've decided to make gazpacho. There's a bit of a power play going on (I know, it's so stupid, but that's what happens when some cow-irkers are ambitious and look out only for themselves; I'm NOT talking about me). So in true Paula form, I'm stepping away from the uproar and bringing soup.
Good choice.

You can't be guilty of loading on the calories.......but you can use that as ammunition :twisted:
