Raw Asparagus, Radish and Parmesan Salad Recipe

OMG. I made this as a side for a girls lunch we had the other day. I wasn't sure at first about it. I'm used to thinking of asparagus as one of those that needs to be cooked or grilled. But MMMmmm is all I can say.
Very light and refreshing.

Raw Asparagus, Radish and Parmesan salad
Makes about 2 1/2 cups of salad.
Approximately 200 calories for the entire amount.


8 to 12 fresh green asparagus spears, to make 2 cups sliced (see instructions)
4-6 radishes, to make 1/2 cup sliced
1 tsp. lemon juice, plus extra lemon juice and peel
1/2 tsp. sea salt
1 Tbs. olive oil
black pepper to taste
about 1 inch square of Parmesan cheese, crumbled
Make ready a bowl of cold water with a little lemon juice and peel thrown in. (I just squeezed out the lemon juice I needed for the dressing, and squeezed the rest of juice & throw the lemon half into the bowl)

Cut or break the hard bottom part of the asparagus stalks off. Cut off the tips and reserve for another dish. Slice the remaining parts of the asparagus stalks very thinly with a sharp knife, or use a vegetable slicer. Put the sliced asparagus in the lemon-water; this prevents the asparagus from turning brown.

Slice the radishes very thinly also.

Drain the asparagus very well and pat dry with paper towels. Put in a bowl with the radish slices, add the rest of the ingredients except for the cheese, and stir around well to combine. Taste, and add a little more lemon juice or salt if you think it needs it (but remember that the cheese will add more saltiness). Add the crumbled cheese.

Sounds delish. Do you cut the asparagus the length of the stalk, or into little rounds?
oh SORRY!! :oops: Little rounds is what I did.
Now here's a great example of why I like Ron's new forum feature (recent active threads listed at the bottom of the index page)...I usually ignore the cooking section (since I really don't cook much :oops: ) but the title of this sounded so yummy, I had to check it out! :D

I'm gonna see if I can talk my husband into making this for me :lol:
I haven't had radishes in ages, literally! This sounds interesting!!

This looks really good and different--will give this one a try!
I made it for supper tonight! It was good.

I had to make a couple substitutions - I only had the shaker container of cheese, and I was out of EVOO, so used the canola I had.... :? - but it was still good. I guess the fresh from the garden asparagus and radishes balanced it out!
I"m glad you thought it was good. I've used the sprinkle kind before too... ya just gotta go with what ya got sometimes!! But I don't think it's nearly as good as it is with the crumbled. :wink:
This was yummy! The radishes were really hot so I only used half and the smallest parmesan chunk I could find was $11 8O so I used Kraft shreds. This is a good salad to take to work for lunch, thanks Bekki :)
