Quick Chicken Casserole Recipe

Another quickie that tastes so good. I love this and eat a crapload all week, but I will say Mr. J does not like casseroles and did not love this. Said it was okay, but he also hates green bean casserole and broccoli cheese and rice casserole which I think is unheard of. Neighbors kids ate this up and so did Joshee. Oldest copies my husband and did not even try it. He doesn't like anything he doesn't recognize.

I got to say the ingredients sound disgusting but this always surprises you with taste.


Note: don't be afraid of the water chestnuts (found in asian section) because it just adds a crunch to it (in a positive way). You won't taste it.

* 1 box of uncle ben's chicken wild rice, cooked as directed
* 3C cooked, cubed chicken meat (I use tyson's already cooked and just cube)
* 1 can condensed cream of celery soup
* 1 onion, chopped (I added 3 green onions instead)
* 2 cans French-style green beans, drained really well
* 1C light mayo (I only used 1/2-2/3C)
* 1C water chestnuts, drained really well and chopped tiny
* salt and pepper to taste
* I added mrs. dash and 1/4t curry

oven 350
Mix together cooked rice, chicken, cream of celery soup, onion, green beans, mayo, chestnuts, seasonings. Dump in 3 qrt casserole dish and bake for 25-30 min.

Notes: Can add can of mushrooms too! I saute them and the onions then add the rest of the ingred. to add more flavor. Can serve with toasted almonds on top.

that sounds really good to me too! but brian must be a relative of your husbands....he wouldnt touch that with a ten foot pole.....that could be a good meal to freeze and eat on the nights that brian is working!

I'm not a casserole fan either, but DH is. I also second the green bean casserole/brocolli casserole, etc. dislike!

I like my food more separate typically 8)
I make something almost like this, but instead of adding onions to the mix, I top with the canned fried onion rings and use mushroom soup instead of celery. I hate celery! The hubby does not like casseroles either, but loves this!
Sign me up as a hater or GB casserole as well as broccoli/rice/cheese yuck.

Still, I like casseroles, but maybe I'm picky about veggies in them?

Not ALWAYS
I think it sounds WONDERFUL and am definitely going to make it, quite possibly tomorrow evening.

(and I love the other casseroles as well!)
All kidding aside, I think this sounds really good. John is very picky, but really likes cassoroles--- go figure!

We may just try this tomorrow night :)

This sounds good to me, but I know my husband wouldn't touch it. I'll have to try it when he won't be home for dinner and then I can have leftovers for lunch.
