Crock Pot Chicken Pot Pie Recipe

This is still the best chicken pot pie EVER: http://forum.oes.org/viewtopic.php?t=20165 but I'm finding less and less time to make things and the below recipe is super quick.

Mr. J always says he thinks this was good but to improve for him... the chicken was a little bland and it needed salt (and he's a HUGE "I hate salt" person). I typically don't add salt to anything and think this needed 0 salt b/c the condensed soup had plenty, so I was surprised and never listen to him. Tasted healthy and delicious to me! So you'd have to make your own call.

Chicken Pot Pie NEEDS a crust, so I serve mine over biscuits and omit the potatoes. Heck, this time I didn't add celery OR the baby carrots. My frozen veggies had carrots. I prefer it with just the bag of frozen veggies and can't stop eating it with my biscuits.

Note: If you add the potatoes, you will need to add 1 can of chicken broth.

3-4 large boneless chicken breast halves, cut into cubes (i used 3 and don't cut too small in case they get smaller from shredding while cooking ...or just be very careful when stirring)
* 10 medium red potatoes, quartered (this will fill your crockpot to the very top) (optional)
* A big helping of seasoning for the chicken (I put ~ 2-3t of mrs. dash and sprinkled some basil)
* 8oz pack of baby carrots (optional)
* 1C chopped celery (optional)
* 2 cans condensed cream of chicken soup (I used 1 cream of chicken & 1 cream of mushroom b/c it's all I had)
* 2 teaspoons garlic salt (I added lots of fresh garlic and NO salt so optional)
* 1 chicken bouillon cube
* 1t black pepper (with no potatoes, I felt 1/4t-1/2t was plenty)
* 16 oz bag frozen mixed vegetables

Put all BUT the frozen veggies into crockpot and cook for 5 hrs low. Add frozen veggies and cook for another 1.5 hrs.

Note 2: Before serving, I added 1/4C flour to a bit of the juice that I took out in a bowl then returned to crockpot. Made it like gravy over biscuits. Sooooooooooo yummy. Also tastes good over noodles.

Any who--this sounds great! I love things over biscuits- so this will be one of my favorites, I am sure!
