relatively small amount of turkey leftovers--what to make?

I've been trying to be more frugal/less wasteful lately.

I have a relatively small amount of a roast turkey breast leftover. Not enough to be a main meal again (at least to eat as is).

Anyone have any good/quick suggestions as to what to do with it? I'd say if I chopped it up it'd be about 1 or 1.5 cups total. Needs to feed 2 adults and a toddler.

turkey croquettes? I used to have a recipe my husband even liked - but I wuld just look one up on the internet these days.
I am a huge fan of cold chicken salad sandwiches. :D

So, would make some with mayo, chopped onions and a dash or 2 of some fun seasoned salt or spice ..........maybe a little chopped celery if I had it....



.......and eat it all myself on whole wheat bread!


and say "what leftovers? I didn't see any leftover turkey"... :roll:
my fav. is turkey pot pie.

add vegies you like, gravy, potato, stote bought crust.
bake and it goes a long way with salad......
turkey enchiladas?
I would use it for turkey noodle soup. Broth-carrots- noodles- seasonings-leftover turkey-- presto... and yummo...

I ended up giving the leftovers to the baby while I made us a pot roast! ha ha ha.

What should I do with leftover pot roast? :wink: :lol:
I give all leftovers to the kids. If they don't like it, they can starve. For pot roast, that definitely sees the garbage if I don't feel like making a sandwich out of it.

I know I'm not helping you be less wasteful ;)

There is no such thing as leftover pot roast. It should get eaten at one sitting! If there are leftovers, just nuke 'em with gravy. YUM!
left overs is just a fancy word for "doggie special dinner". :lol:
