anyone make fresh pasta

I have always made my own egg noodles for soup, I know have a pasta machine made in italy.
Its for rolling out and about six different kinds of flat pasta.

What I want to make is a filled pasta.
I can get a attachment for it. Is it worth it though or try and make it after it gets rolled out.
Just a thought and yours too.

I remember, when I was a little girl, going to my grandmothers house the day after Thanksgiving and helping her make homemade Christmas ravioli. And I mean homemade!!!

Grandma would hand grind the turkey left overs with some cooked hamburger and chicken.

She would get the ravioli dough ready and then....and then....She had this very special ravioli rolling pin with cut out squares. First she would roll the dough with a regular rolling pin, then go over the rolled dough with the ravioli rolling pin. She would do this on two separate sheets of pasta...then it was my turn....My job was to put a teaspoon of the meat mixture in the center of each square. She would put the pasta top on the 'pie' and then My job was to prong each side of each ravioli with a fork.

What a wonderful memory!!

She would also make homemade gnocchi, a potatoe dough and I would take a glob of it, and roll it off a fork to make the gnocchi!!!


:oops: :oops: :oops: :oops: :oops: sorry, this really doesn't help you, but I just had to relive through this thread the heartwarming memory of my grandmother and her warm kitchen full of delicious smells!! What a special time this was for me!!!

I don't make my own, but would love to learn how to! I think it's fulfilling to do things from scratch. Makes things automatically taste better too ;)
What type? Ravoili? In addition to the traditional machines such as put out by Atlas, Kitchen Aide has a new attachment: http://www.williams-sonoma.com/products/e180/?pkey=x%7C4%7C1%7C%7C4%7Cpasta%20maker%7C%7C0&cm_src=SCH If you look at the rest of Williams Sonoma's site, they also have pasta makers that fit on the front of the mixer. But if you are talking larger filled pasta including cannoli, I haven't seen those in machines for the home.

Still my question is do I get the Ravoili maker? Do it by hand?

I useto havea Ronco pasta maker but the only one who could work it was Richard. It was very good too.

Use to have a couple come over andwe all got to work on a meal! It was so much fun. AND yummy.

You can get a ravioli maker. It's metal and has indentations to hold the filling. You lay a sheet of dough on the bottom, drop in your filling, top with another sheet, and then run a rolling pin over it
Homemade pasta is definitely the best - you should definitely do it. I wish I had a pasta machine so I could make my own. I've tried it twice without and my ravioli's always end up too hard - I over roll them!
Im planning to do pumpkin ravioli for X-mas, and am going to be experimenting with recipes this next few weeks. We have a hand-crank pasta machine, and Im just going to use one of the simple molds like bestdogs mentioned...Ill let you know how it gos! :D
do you have a recipe for the pumpkin ravioli? it sounds good and a have a few fresh sugar pumpkins still left from the garden. I would love to try your recipe.

We dont really have a recipe...we're just experimenting at this stage, and trying to come up with one! :D My hubby is really the chef in our household (literally...he's a retired prof. chef) and one of the very few things he acknowledges me as being better at that him, is homemade pasta! :twisted: My first thought had been to put the pumpkin into the actual pasta, but the moisture content is apparently an issue. Our next attempt will be plain pasta with a filling of pumpkin, Gorgonzola cheese, egg, and pine nuts.

Ill let you know how it goes! :D

If you don't have time to make pasta you can use wonton wrappers. They work great, cook in under 5 minutes and can be filled with anything. I usually fill with ricotta, fresh spinach and minced mushrooms. For sauce you can use marinara, browned sage butter or whatever you like.
They only pasta I ever make is a noodle recipe from my grandmother that she got off the radio during WWII.
