Spinach Orzo Pasta Salad Recipe

I woke up about 2:30 a.m. in a panic.......I need to make something for a luncheon at church today. ARGH! So I stumbled to the kitchen, threw open cabinets and refrigerator......what can I make?? Of course I'm a good 5 days late for the grocery run...........

So I threw together this.....it turned out yummy.......took it to church only to find out the luncheon is next week 8O :oops: Well, I also stopped and bought doughnuts and bagels......so away from the doughnuts and bagels, I set the salad out .....those who were curious ate it......phew!

16+ ounces orzo pasta (also called RosaMarina pasta)
1 box frozen chopped spinach
1/2 red onion diced
1 can garbonzo beans rinsed and drained (optional)
about 2 cups cherry tomatoes
1 container pesto sauce...with the refrigerator pastas
wine vinegar.....I didn't measure, just kept adding to taste
about 1-1/2 t. salt
1 t. freshly ground black pepper or could use white pepper

Cook or just defrost the spinach and squeeze out excess moisture. Cook orzo in boiling salted water until cooked, drain. Add onion, beans if you desire. Dressing: in a jar (for shaking to mix) combine wine vinegar and pesto together . (I used all the pesto, but think you can get by with using about 2/3 of a container) I'm guessing in my sleep haze I used about 1/3 cup wine vinegar total, but was tasting constantly until it was "right." Pour over pasta. Toss and taste. I found it needed salt and pepper as mentioned in ingredients. Add tomatoes, toss and chill. I also had some Parmigiano-Reggiano left over and carved it into thin strips to garnish.....that is what I did't eat instead.

:lol: :lol: :lol: I have a week to worry about that. I'm seriously thinking the pumpkin dump cake will be one item and then something nonsugar for the other. Friend said I should do the orzo spinach salad again, but she's always very kind. Problem is I hate to bring something that only serves 8-10 when we have several hundred go thru the line. Little things take up too much space....except at the dessert table.....people don't do the sugar like they used to. If money were no object I'd do meatballs again.....but making 200 meatballs did me in. I did use bagged for the additional 100 or so and yes, people noticed. grrrrrr.

So any suggestions for vegetable or protein that will serve......at least 40 is appreciated.

And I'm also considering queso.........Ro-tel and Velvetta :lol: :lol:
You did a great job of coming up with that!!! You need to rest if you're making food a week in advance. :lol:

Seriously... do you have the official title as chef at your church? It seems like you're feeding them (in large quantities) every week. That's a lot of work! I can do occasionally, but not nearly the amounts you cook for (that I remember in the past).
No, I'm not official chef....... :lol: Seems like it though. You know Greeks, if there are people in a group, some Greek will come along and feed them.

I do belong to the ladies philanthropic organization and we do have places we feed from time to time. The pastry baking for the festival was the "yiayias"...the older ladies who aren't at work all day. (pastries sold out early at the festival) Plus all the church activities, glendis (parties), fund raisers, etc........yeah, we eat alot.
I went to the Greek festival for the first time this year. There were so many people there. The lines for food were really long! We had a yummy doughnut thing and some really good pork/pita dinner. I definitely want to go back next year during the day when it is less crowded.
What day did you go? I was exhausted and took Saturday off (days before setting up, etc) and I understand I missed the CRUSH! Sunday we began running out of food by 1pm....so I know you didn't get your souvalkia on Sunday. They changed things re: the food this year, maybe not all for the better.......but they wanted to try something different.

Come Friday if you can......even right from work or first thing Saturday. Had to laugh, when we opened gates on Friday, the first through were the news media......not to report, but to eat! Lots of tv faces. We had many who came just to buy lunch for the folks back at work......you'd see them leaving with large boxes stacked with food.

I was working admissions and answering questions in the church between tours, I try to avoid the food area.......though I think my DH ate a whole lamb what with all the meat he was packing away.

The doughnut things are loukoumathes. This year Nick tried a little beer in the batter.......turned out more fluffy so will stay in the recipe. Anything with honey and powdered sugar can't be all bad............

We went on Saturday night. I know a couple of the collage age dancers so we went to see them perform. I'd love to learn some of the dances and hop in circle. It looks like so much fun. I especially love that the priest is in there dancing with everyone. :)
My favorite part was definitely the honey squirt in my mouth after biting in to the loukoumathes.
I'll have to PM you next year so we can make sure to meet up.
The festival at St. Sophia's here in San Antonio is this weekend. It's always packed and so much fun....not to mention yummy :D
As Zorba said, "You want to dance?" There are Greek dance lessons Nov. 8 and Dec. 6th. Probably in the evening......see if those college folks would come and BRING friends! Last lessons there were on 5 people there :cry: If the kids have a way to post the info, let me know and I'll get the exact stuff for them. (I don't "tweet".

St. Sophia Funstible? I'd say eat some lamb for me, but I'm still pretty well sated.
