Cucumber Salad Recipe

You either have had this and really like this ...or you hate it. I had to use up some of the cucumbers from the garden. This is mr. j's "must have" for every holiday, and I have to admit that I don't understand why it's something he drools over. He is not a food person, so when he likes something ...it's HUGE. I have grown to really like it but at first... an "okay" was all I could say about it, and I'd pass it on the dinner table.

So a great side dish .......if you like this sort of thing.

* 2 large cucumbers, very thinly sliced
* 1T salt
* 1C white vinegar
* 1/2C water
* 3/4C sugar
* 1.5t dried dill

After you cut the cucumbers, put in something with a lid and salt with the T of salt. A lot but necessary to pull out the excess water. Let sit 2-3 hrs. I shake up the Tupperware a few times in those 2 hrs to move around the salt. Drain all the water but do not rinse the cucumbers.

Combine the vinegar, water & sugar in saucepan and bowl until sugar is dissolved. Pour over cucumbers, put in dill ...put in fridge and let sit overnight. Good for a long time!

You can add onion to the recipe, but I don't like to.

My hubby loves this salad. He insist he be served with each holiday meal as well...a big deal on his side of the family.
Seeing as I hate cucumbers (even the cucumber/melon lotions gag me), I will never be trying this one. I also can't stand vinegar (I have issues w/ sour stuff), so it's a total no-go for me. :evil:

Todd has learned to make his own cukes w/ vinegar..... :lol: :lol:
Cucumber lotions?! Really... I usually think they smell great! :lol:

...but I do prefer to skip cucumbers in my salad and hate them in my subway sandwich.
How is the texture to the salad? Are the cucumbers a bit slimy or crunchy?

My mom makes a similar salad with broccoli, cauliflower, and cherry tomatoes. I'll have to pass this recipe on to her.
It's dependent on how much you let them soak in the salt. They can either be super crunchy or if you let the salt shrink all the water out of these... they tend to be in the middle of tender with a small crunch.

Alas, the frost has done in my garden for the year.
My husband loves a version of this where you add sourcream instead of the vinegar and water. You can also add onions. You have to like sour cream.
Gotta use the onions in this one :)

I also add tomatoes to this sometimes. We never have it for holidays... only in the summer when things are fresh. Funny how everyone has their own traditions/ likes/ dislikes :)

Ugh... as I sit here in weather with a triple digit heat index plus so muggy that the windows fog up when you turn on the A/C in the morning. I miss Alaska! His garden is going crazy right now and growing all kinds of things

BTW, my next door neighbor and his grandson just went to the international balloon fiesta in albuquerque and I couldn't help but think of you in general. Wish we could have been there too.
