I was so skeptical of this recipe b/c of the cake box, but oh my gosh... this is a keeper. Totally doesn't take like cake but a very moist chewy cookie. Husband has NO IDEA except that he turned his back for one minute and then VOILA ........these were ready to go in the oven. He said "boy, that was fast... didn't even see you get the flour and sugar out." I'm keeping it a secret, and just snickered and said that's why I like these!! We've gone through 3 batches since this Friday. Yep... 3 boxes of cake mix with only 2 people eating.

So good!!




18.25 oz box of any chocolate cake
room temp stick of butter (1/2C)
2T oil
1t vanilla
2 eggs
1C chocolate chips (I always use a mix of chocolate chip and semi-sweet)


Stir first 4 ingredients. please note I said stir which is why you need room temp butter. Do not use your mixer.
then add in eggs just until blended. mix only to blended
then add chocolate chips.
put in freezer for 15 min or fridge for 30

set oven to 350.
bake for 10 min. must let cool on sheet for 15 min. to set. if you can't get it up AFTER the 10-15 min b/c middle is gooey, then add 4 more min (it's all dependent on how long it was in the freezer of course). If your cookie was flat, you overmixed and didn't put in fridge long enough.

If you don't overmix, you can skip if the fridge portion if you like a flatter cookie (generally mr. j does). This is how they'll turn out.

Yep, I first ran across this when I was a preteen baker making Jiffy cakes...obviously you cut in half the eggs, oil, etc. So Mom and I went on a spree making many different combinations......you are limited only by your imagination....and various cake mixes Unfortunately the recipe doesn't make a lot of cookies........but what your get is right yummy.

I use this all the time, with different cake mixes. We love leomon cookies with a cream cheese icing-- and using a spice mix with nuts and raisins is really good too. Smile
Okay I made this with a box of "Funfetti" cake mix this weekend. Oh my ...my diet went to pieces this weekend.

With this particular cake mix, I used 1/3C oil, 2 eggs, no butter, 1.5t vanilla, and then the cake mix!! That's it. It looks so pretty since funfetti has a bunch of little candy coated sprinkles inside. I added some chocolate chips too but that's just my want to get fat preference.

I'd take a pic, but really....... is it necessary? I'm too tired. Just wanted to share in case someone wanted to try this. I think it would be PERFECT for a kid's party.

I'll do lemon cake mix rolled in powdered sugar mix next and again.. only using 1/3C oil and no butter but vanilla. ........but with the chocolate cake mix, I still will do what I posted above (seems to cook the best w/the chewiest results after many tries). ...and I got the chewiest results with 1/3C oil with the other cake mixes.
Do you get only 5 cookies a batch, or is your first pic just the leftovers?
Laughing ...that was probably just how many went in my mouth after the pic. Second pic was just for show.

I'm in the process of making some right now, so I can be more specific after I'm done, but I'd say they make ~30 if using a med. cookie scoop (which I believe is 1.5T?).
