Crockpot Black Beans & Chicken Recipe

Oh my gosh... this is one of those must tries. Mr. J "H*A*T*E*S" sweet potatoes, and I just hate them even if covered in all the marshmallows in the world, but we ate this up like it we hadn't eaten for days. In fact, while it was cooking, he was so pessimistic from the spices that made the whole house smell (I thought it smelled fantastic), and then of course the combination of ingredients that he apologized in advance for the sandwich he knew he'd make b/c this would be terrible.

NOTE: I doubled the sauce b/c I didn't want the sweet potatoes to burn or veggies to dry out as they weren't all covered. I just served using a slotted spoon to serve with a few spoonfuls of the juice, and to me it was perfect with nothing dry! So I'd say I added about 1/2C more salsa, doubled the amount of cumin, all spice, garlic, and about 1/2-2/3C more broth). You can also just use 1 can black beans and 1 can corn but I thought the beans & corn were the best part!)

* 1-2T olive oil
* 3lb skinless chicken thighs (used boneless and only a 2lb package but bone-in would work fine)
* salt and ground black pepper to taste (I actually used a good tsp of salt for the chicken as well as some mrs. dash while browning)
* 1/4C loosely packed FRESH cilantro leaves (not optional)
* 2 large sweet potatoes, cut into chunks
* 1 red bell pepper, cut into strips
* 2 cans black beans, rinsed & drained
* 1C can corn
* 1/2C chicken broth
* 1/4C loosely packed cilantro leaves
* 1C med CHUNKY salsa
* 2t ground cumin
* 1/2t ground allspice
* 3 large cloves garlic, chopped
* lime wedges to squeeze on top before serving (optional)

Heat oil in skillet, season chicken w/salt and whatever else you use. Dump 1/4C of cilantro in and fry on med-high for 3-5 min on each side.

Put chicken in crockpot, then throw in cubed sweet potatoes, sliced bell pepper, black beans, corn, broth, spices, another 1/4C cilantro, salsa, and garlic. Set on LOW for 4 hrs (I thought it needed 5 for that total tenderness for thighs). Use lime when serving. I served ours on 2 boxes of uncle ben's chicken wild rice.

Interesting, but won't fly here at all.......cilantro. Still the sweet potatoes and beans is something I wouldn't combine, but looks interesting. Orange sweet potatoes and black beans.......how Halloweenie

I have no idea. I have 100 cookbooks [relatives always think I want them], but I haven't opened most of them, so I couldn't say whether they were good or not. I can only try a recipe after people I TRUST has tried it first. I hate wasting my dang time. :lol:

I tend to type in what I'm looking for, and go with whatever website I can find (w/plenty of ratings saying it is good). I hope you find and share all the recipes you find!!!!

I wanted to post a fabulous chicken bbq slow cooker recipe that we made last week, but I forgot to take a pic, and my husband didn't put the leftovers in the fridge like I had asked, so it sat out all night. :( Almost put one together just for the pic, but I only had homemade bread, and didn't want to waste it. :lol:
Might have to try this one.....I'm rather wary of sweet potatoes....but since you like it, I may have to give it a shot.....I agree on sticking with recipes that have high ratings or come highly recommended. I love allrecipes.com because they have the ratings and reviews, which I ALWAYS read before I try something. I even sort the recipes by rating. :D

I just cut the sp in small bite size chunks, ,and we really didn't taste it. The thighs were so dang tender that I wish I added 2 packages of thighs! I'm making it again this weekend for family when they come visit. ...and it's what I've eaten the past 2 days. Reheated well in the crockpot. :)
Mrs. J, when do you have time to cook with 2 littles one, a newborn, multiple dogs, and a husband? Do you ever sleep???? :)

my husband would say no. i get up at 2 every other morning to feed baby then shower lately b/c i can't sleep and sitting in bed when i'm wide awake makes me feel crummy. i go to bed as soon as the kids go down though, and am out within 5 min!

lol, no the other mornings I just stay in bed watching tv and miserable [thinking of the things i could be finishing] b/c I can't sleep. I would get up every morning, but it bothers my husband that I get up so early. He thinks I should go back to sleep .......not understanding the words "I CAN'T."
I feel ya. On the other hand, I made your recipe yesterday, and YUM YUM! We really liked it. Score another one for Mrs. J!!!
