Question for farmer-type people...What is raw milk?

I went to a new farmer's market this weekend and one of the booths was advertising Raw Milk. I know what it is, but what is the purpose of it? As in, why would one want to have raw milk versus regular, pasteurized millk...is it used for different things than regular milk is? Does it taste different?

Raw milk just means it hasn't been pasturized, right from the udder. The taste and texture are different. I'm not a milk fan, so I won't say what it tastes like for me. :wink:
My husband also tells me its better for some things, like cheesemaking.
When I grew up we used to get this from a friend . . . we would make a family day out of churning it to make butter. It is extremely rich (obviously) and takes a bit of getting used to. Pretty fun, though!!
I grew up in dairy farming country and a lot of people would come to the farms to get raw milk to make cheese and yoghurt.
I wont comment on the taste either. :lol:

Some people who eat organic, natural diets dont like using milk that has been altered. I think they're usually less worried by the pasteurising process than the homogenising, where the cream is broken up into tiny particles that stay suspended in the milk rather than just floating to the top.

However to pasteurise milk it is passed over pipes full of steam so that it quickly boils to kill any bacteria before it is chilled again. So some people believe that this destroys some of the vitamins and other healthy elements in the milk. They may well be correct as heat does destroy some vitamins etc.

On the other hand every year one of the dairy farmers living near my childhood home got sick from drinking raw milk from their vats, sometimes nasty bugs that took months for them to recover from so I'll stick with the processed milk thanks. Too me it tastes better, stays fresh longer and wont make me sick. But that's just me. :wink:

After working in the odd diary and seeing the cow's poop and wee all over the place :evil: and watching that splatter all up over the cups used for milking, 8O :oops: despite seeing everything get wiped over before being attached to the teats I'm all for pasteurisation. Just me though, as I said many diary farmers just take milk straight from their vats and put it in the fridge for their families to use.
