Crockpot marinara recipe needed!

I need a good hearty, vegetarian marinara recipe for my *new* crockpot. Anyone?

hmmm: I always consider that something I can whip up in under 30 minutes, for example:

olive oil
garlic, minced
onion, finely chopped
1 big can no-salt added chopped tomatoes, undrained
balsamic vinegar
giant tablespoon of no-salt-added tomato paste
fresh chopped basil
fresh chopped oregano
fresh chopped parsley
salt to taste, fresh ground black pepper to taste
Preparation:
Heat oil in a large pan or skillet. Sauté garlic and onions on low heat until softened, about 5 minutes. Add tomatoes, balsamic vinegar and tomato paste. Bring to a boil, then reduce to a simmer. Add chopped herbs and simmer uncovered for 15 minutes.

Crock Pot Marinara Sacue:

1 (28 ounce) can whole Italian-style tomatoes (cut up and undrained)
2 large carrots, peeled and coarsely chopped
3 stalks celery, diced
1 large onion, chopped (about 1 cup)
1 tablespoon minced fresh garlic (can use more)
1 large bell pepper, seeded and chopped
1 (6 ounce) can tomato paste
1/2 cup water
2-3 teaspoons sugar
2-3 teaspoons dried Italian seasoning (rubbed between fingers to release the flavors)
2-4 teaspoons dried red pepper flakes (optional or to taste)
1 large bay leaf
salt and black pepper (I use quite a lot of salt to bring out the flavor!)
Directions
1Place ALL ingredients in a minimum 4-quart crock pot/slow-cooker; mix well cover and cook on low heat for about 8-10 hours.
2Uncover and cook on high heat for the last 1-1/2 hours.
3Season with more salt and pepper to taste.
4Delicious!


(and I admit, I've been known to open a "jar" every once in awhile :wink: )
I have put the jarred sauce or a simple sauce in the crockpot with some vino and it makes a nice slow cooked sauce, especially if you have time to sip some of the wine while you wait :wink:

I think I'm going to try the recipezaar recipe. We have been really disappointed with the jars we've tried recently, so I'm breakin out the crock pot!

Good call on the wine too... I'll have to remember to pick up a bottle tonight
