Keep an open mind about this healthy recipe :)

Bet you really want to try this-- with the post caption. :P

This is a very versatile sauce recipe for those watching their weight, or, if you want a healthy alternative to butter laden sauces.

My Mom uses this all the time, and, I must say we have kind of grown to like it... Like I said-- it is versatile and forgiving.

"Cream" Sauce

2 cps. cooked white beans ( I use precooked navy beans in the jar)
1/4 cp. buttermilk
1/2 cp. chicken stock ( or beef broth depending on recipe)
1/2 cp. low fat grated parmesean cheese
1/4 cp. fat free sour cream
1 TBSP. garlic - I use fresh roasted, but Mom uses powder -- either is fine
1 TBSP. Onion salt-- or-- minced onions ( again your choice)


Mash beans ( I use my Braun hand mixer for smoother consistancy)
In a 2 quart saucepan add other ingredients, stirring over medium heat.
If a thinner sauce is desired, use more stock, thicker- add more mashed beans.

That simple! I use it for a mock alfredo sauce-- beef stroganoff - a base for a cream soup. I've added mushrooms, onions- celery -- you name it.

It isn't the real thing-- but the fiber in the beans is great- and the rest is pretty low fat and healthy. My sister refuses to use the buttermilk, and uses regular 2%. I love buttermilk, but hate regular, so it is a personal preferance. The buttermilk does tend to give it more of a 'twang" - so keep that in mind.

Huh? I've never heard of such a thing. I've heard of South Beach cauliflower mashed potatoes...but not cauliflower mayo! That's what ff mayo is for!

I'm going to try this recipe. I can think of million uses for it!!!!!
Along the same line........I don't remember all the ingredients, but basically cook cauliflower, puree add lemon juice, and ?? It was horrid.

This was before the low fat or no fat mayo came out.

Ah...in the "old" days when ww members had to eat liver once a week? And made cheesecake by putting cottage cheese with cinn. on white bread and toasting it? Gawd! That stuff was awful!!!!!
That doesn't sound odd or anything. Sounds really goood!!!!!!!!!!!!
LOL! Couldn't understand why they wouldn't accept liverwurst as my liver portion......with real mayo of course :lol:

Actually I like cottage cheese with cinnamon.......leave off the toast and toasting it. Sprinkle a little artif. sugar on it.........tasty.
This sounds really good and the beans probably make it very Weight Watchers friendly.
