Microwave Lemon Curd Recipe

This stuff is great and very easy to make. I've never tried it with bottled juice but it would probably be fine. When I can find some decent key limes I'm going to see how that works.

INGREDIENTS
1 cup white sugar
3 eggs
1 cup fresh lemon juice
3 lemons, zested
1/2 cup unsalted butter, melted


DIRECTIONS
In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon zest and butter. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Remove from the microwave, and pour into small sterile jars. Store for up to three weeks in the refrigerator.

This would be really good on ginger bread or thin Swedish ginger cookies.
wow! That brings back memories! When I lived atop mountains, far from civilization, I'd make my own lemon curd. Limes were real hard to come by, how wonderful would lime curd be?? (from one who loves to eat the limes out of her margaritas..)
