RECIPE CALL OUT!!!

OK everyone- do you want to contribute your good deed of the day?

My sister works with a gal whose elderly father is in hospice right now. She is cooking for him, but is a bit inexperienced, and my sister asked me to gather a few recipes. They need to be easy to prepare, transportable, reheatable, and large enough to make a couple meals out of.

As far as I know, there are no dietary restrictions. I'm already contributing a few chili and stew recipes to her. If anyone would like to give me a recipe or two I'd really really appreciate it, and I sure that Barb will too!!

This is one of my favorite easy recipes, and tastes really good too!

Noodleless Lasagna

8 oz. shredded motzorella cheese
16 oz. sour cream
Small jar of Prego spaghetti sauce
8 oz. can of crescent rolls
1 lb. Hamburger meat

Brown meat, drain
Add prego to meat, put in baking dish and set aside

Mix moz. cheese and sour cream. Dot on top of meat mixture. Heat in oven long enough to melt the cheese.

Take out and place crescent rolls on top to make a crust.

Bake at 350 until brown.

I just made the most delicious peanut butter oatmeal chocolate chip cookies yesterday (w/pics of course...lol)....and they would last a long time!

Ramen is not good unless you add green onions, chopped up turkey hot dogs (i don't eat regular ones), an egg, and when it's finished ...top with a piece of cheese.

I used to make this for boyfriends in college back in the day (you know us poor college students....hahaha) ...and the boys loved it!

men love this junky non nutritional stuff too. of course the veggies are a great idea!!! :D

lots of people just fry it too and add in the veggies and meat, touch of water (enough to get the dry mix going).

Plus, Louis Rich (i believe) has the most fabulous line of already cooked and sliced chicken strips. I put it in everything (pasta, tacos, enchilladas, ...you name it!). Eveyone always says the chicken tastes GREAT (they come spiced or regular). I just smile and keep my secret to myself. :)

Ramen mix with a few other added things make a good salad dressing too. I will have to look it up to post it though. I'm running late for a hair appt though!
I wish we had more threads that were just ongoing conversations. I think it would really boost the # of people posting. Threads like "what's for lunch" "what made you smile today" ...etc. We'd learn so much about one another. On other boards, these threads end up being 100+ pages (after several several months of course). Anyways, I was glad to see another recipe thread made! :D
This is a very easy chicken casserole type thing that will give leftovers.

4 chicken breasts
1 can cream of celery soup
1/2 can cooking sherry
4 slices Swiss cheese

Put chicken breasts in a casserole. Top each breast with a slice of Swiss cheese. Mix cream of celery soup with cooking sherry. Pour over chicken breasts. Bake uncovered at 350 for 45 minutes or until chicken is done.

This is really good with rice and a salad.

I add sliced sauteed mushrooms cuz I like them. I put the mushrooms on the chicken, then the cheese then pour the soup over.
Here's something fast, easy and tastes good too!

1 lb. hamburger, cooked, drained (and I rinse mine)
1 pkg frozen mixed vegetables
1 pkg ramen soup mix

To cooked hamburger, add the frozen veggies and a little water, after veggies are hot, add ramen noodles and the seasoning packet. Simmer until the noodles are done.

This would be somethng easy to prepare and take along to her father.
Vegetable soup the best always
baby carrots or regular cut up
butter peas
corn
diced tomatoes
onion
ham the regular pink kind with a little fat
any other meat or vegetable
salt & pepper
some water
Speaking of Ramen... you can give him something a tad better and use the same recipes but with Kraft Macaroni and Cheese.

How many hamburger helpers can people come up with? It's endless and always good. :)
Here's a hamburger helper kind of thing.

Taco Macaroni

1 lb ground beef
1 packet of taco seasoning
2 1/2 c. water
2-2 1/2 cups of uncooked elbow macaroni

Brown the ground beef. Add the taco seasoning, water and macaroni. Bring to a boil. Bring down to medium heat, cover and cook for about 8 minutes or until macaroni is cooked.

Serve with salsa, sour cream, cheese, whatever you like. This works good for kids too, because hubby can doctor it up with a spicier salsa, and the kids can put on just the stuff they like.

Teriyaki Chicken
(I actually took a course on Japanese cooking once and this is my favorite dish)

Melt 1/2 cup sugar into 1/2 cup Kikoman soya sauce (use this type of soya sauce as it's not as salty as the others)

Pour over chicken breast or chicken wings.

Bake at 350 for 45 mins

Turn only once during cooking.

Voila! that's it just the sugar, soya sauce and chicken - easiest dish in the world. Serve with rice and a salad.
Crockpot Potato Soup

5 lb potatoes peeled and cubed
1 small onion, chopped
3 cans chicken broth
1 can cream of chicken soup
1 8 oz package of cream cheese
1/2 lb bacon cut into bite size pieces

Combine all in crock pot and cook 7-8 hours on low or 4-5 hours on high. This is SO yummy! I made it using the Healthy Choice soups and light cream cheese. I guess you could also use turkey bacon.

We added some shredded cheese on top as a YUMMY garnish! Great for the colder weather.

Serves about 6-8

Chicken Alfredo Lasagna (serves 12)

10 uncooked lasagna noodles
1 jar (16 ounces) white Alfredo pasta sauce
1/4 cup milk
1 1/2 teaspoons dried oregano
3 cups coarsely chopped cooked chicken
1 can (14 ounces) artichoke hearts in water, drained and chopped
1/2 cup chopped red bell pepper
1/4 cup finely chopped onion
1 garlic clove, pressed
3 cups (12 ounces) shredded mozzarella cheese
1 package (4 ounces) crumbled feta cheese
2 cups packed fresh baby spinach leaves (about 4 ounces)

Preheat oven to 375 degrees. Cook noodles according to package directions, using shortest cook time; drain. In small bowl, combine Alfredo sauce, milk and oregano. Whisk until blended and set aside.

Coarsely chop chicken. Also chop artichokes, bell pepper and onion; place in large bowl. Press garlic over vegetables in bowl and add mozzarella and feta cheeses; mix well.

To assemble lasagna, spread 2/3 cup of the Alfredo sauce mixture on the bottom of rectangular pan. Top with half of the noodles, over lapping to fit. Layer half of the spinach leaves over the noodles; top with half of the chicken mixture. Repeat layers, starting with half of the remaining sauce. After layering, pour remaining sauce over top of lasagna.

Cover with aluminum foil and bake for 45 minutes. Carefully remove the foil and continue baking 10-15 minutes or until bubbly. Remove from oven; let stand 15 minutes for easier serving. Cut into squares.

Cooks Tips: For added convenience, use a rotisserie-cooked chicken for this recipe. One cooked chicken weighs about 2 pounds and will yield approximately 3 cups of chopped meat.

Prepare lasagna as recipe directs up to 1 day in advance. Cover with aluminum foil and refrigerate. When ready to bake, remove from refrigerator while preheating the oven. Increase covered baking time to 55 minutes. Continue as recipe directs.


Bean soup (serves 12)

1 can whole kernal corn (drained)
1 can stewed tomatoes
1 can whole new potatoes (drained)
1 can kidney beans
1 can Ro-tel
1 can black beans (drained)
1 can pinto beans
1 can green chili peppers
1 can ranch style Texas beans
1 can chili beans
1 pound Hickory smoked sausage (cut up)


Cook sausage as directed. Mix all ingredients together in crock pot. Heat on high for 3-4 hours. Simple and delicious :)
There is alot of great recipe websites, like Recipe Archives (I think), or Weight Watchers, I use their site sometimes if I'm looking for something.

My favorite easy dish has to be Beef Stroganoff.
Hamburger(fried and drained)
Mushrooms, onions, sour cream, can of mushroom soup,ketchup, worchestire sauce, salt and pepper.

Cook together until bubbly, adjust things to personal taste, serve over :

Noodles(cooked and drained)
Potatoes
Rice

My other in a pinch meal is Chicken and veggie stirfry, over rice. I like to have pkg stirfry seasonings on hand, and use them instead of ccreating my own.

As well as Chili pkgs on hand, then my daughter fav meal is chili with kraft dinner...minus the kidney beans...we like them tho.
Speedy Spinach Lasagna

1 Lg Container Ricotta Cheese
2 eggs
Spaghetti Sauce
3/4 lb Mozzarella Cheese
Parmesan Cheese
Frozen Spinach - thawed and drained
Garlic
Salt & Pepper

Mix Ricotta Cheese, 2 Eggs, Chopped Spinach, 1/4 c Parmesan Cheese, Garlic and salt & pepper

Grease bottom & sides of lasagna pan (I use the throw away silver pans)

Cover bottom with Sauce
Layer UNCOOKED Lasagna Noodles
Cover w/ layer of ricotta cheese mixture
next a layer of mozzarella cheese
then sauce, noodles, more cheese, more mozzarella, more sauce, noodles, etc., etc.

End with Sauce and sprinkle with Parmesan Cheese

Cover with a peice of greased aluminum foil and bake at 350 for 50-60 minutes or until tender.

It's yummy and it can be frozen and reheated.

Two great ones from way back when I was learning to cook:

Cheese Nip Chicken

4 or 5 chicken breasts
1cup (and a little) crushed cheese nips (or similar)
8 oz cour cream
1 stick butter melted
Place chicken in baking dish and spread sour cream over it. Sprinkle crushed cheese nips over sour cream and pour melted butter over it
all. Bake 45 min to 1 hr at 375 degrees uncovered.
You will be surprised how good this is.


Hamburger Stew

1 lb ground beef cooked/drained/rinsed
3/4 cup chopped onion sweated in 2 T olive oil
1 can green beans
1 can yellow wax beans
1 can corn (or whatever you prefer)
1 can tomato soup
(the original recipe called for the mixture to be topped with mashed
potatoes, but I always skip that and add mashers as a side dish to this)

In large skillet put burger and onion and add seasonings to taste - I use
1/2 tsp garlic powder a pinch of celery salt and 1/2-1 tsp good paprika. Add all other ingredients and add just a bit of water to make
the mixture easy to stir, but not really wet. Heat through and simmer for
just a few minutes till flavors marry. Really good - great for campfire
dinners. Really fast and never goes to waste.

I have been making these since I was about 10 years old. My son now
makes them too. The second is his favorite.

Also - take a pack or two of mexican or spanish rice and make according
to directions. In another skillet brown chopped keilbasa(sp) and loads of
chopped celery. After sausage is browned and celery is translucent add to
rice and combine well. My son loves this too - also really quick and
satisfying.

I have gobs of these easy recipes. Let me know if you want more and I
