crock pot Chuck Roast again, but oh so yummy

I got excited about this one cause it sounded so good and simple. It called for a London Broil, a can of Mushroom soup and a can of Tomato soup, an envelope of onion soup mix.

I was running out of the house on a Saturday morning for a meeting and we were going to go shopping for some new chairs in the afternoon, I knew I would have no time to cook... so I tried this one, good but the chuck is better.

Put the London Broil in, dump the two cans of soup in (no water) and sprinkle the dry soup mix on top. Turn on the CrockPot to low and let cook for 10 hours. Don't stir or anything...

I did this and was not overly impressed by the meat but the flavor was great. What I have since learned is that the higher quality cuts of meat don't really do well in the crock pot. The less expensive ones do really well.

So I changed the meat to Chuck Roast to fit in the Crock Pot, same soup as above, the two cans plus the envelope with no water, put on high for about 6 hours and the meat is so tender and flavorful, the gravy is thick and tasty. I served it with steamed veggies and bowtie pasta.... I hate chuck roast and loved this one. I would serve this to company any day.

Tonight I'm doing chicken tacos... meat is cooking as I type...

Just have to cut up the tomatos and grate the cheese... and it's dinner!

I've got a roast in the crock pot as we "type". I just took a carrots, onions and coursely cut up potatoes, put them in, seasoned them, then took a sirloin roast, rubbed it with Lipton's onions soup mix, and plopped it on top of the veggies. I put in about 1 cup of water and plugged it in.

Heaven will be waiting for us when we get home from work!

I want to try some chicken recipes soon, I've only been making beef things.
I guess it's crockpot night for everyone! I use a combination of what both of you did. Either way, I just love how simple it is, and it saves me from having to cook when you're not in the mood!
Oh, pot roast........that's what I was going to make today! I forgot. Instead I got a ham and put it on to boil (removes the salt) and forgot about it. Now I have a giant dried out piece of pig. I don't really like pig (except bacon), this was to have gone into a giant casserole for this weekend function. Drat! I want potroast!

armywife posted a chicken fajita one I think... you just have to go a page or two back, and I posted a chicken taco soup one (more like chili). My mil does one of those stuffing/cheese/soup ones with her chicken.
Mexican Chicken

Cut up chicken tenders and Boneless/skinless thighs 2 to 3 lbs total
1 jar of South West Salsa in a jar (todays is roasted tomato)
1 lg can of diced tomatos
1 sm can of chillie peppers (for us mild, you pick the heat)
1 envelope of Burrito seasoning (Lawrys or store brand)

put it all in on high for 6 hours or low for 8 or more

Serve as soft tacos, or tortilla soup or.... anyway you like I'm going to strain a little of the liquid off and serve in crisp taco shells with the fixens!

Just plain ole BBQ chicken here tonight, with scalloped cauliflower and green beans. Whoopie. :roll:
well I was even lazier and di takeout tonight. anyone have a recipe using ground chicken for the crockpot for tomorrow.
I love a pork roast and sliced cabbage myself!
I use the cheap boneless roasts too - they turn out yummy.
I set the roast in, sprinkle it with seasoned salt and toss in the sliced cabbage. No water - turns out heavenly.

Tonight was leftover meatloaf - always better the 2nd day!
Do you all think more people are cooking at home again? I find that I really don't want to go out now except for special occasions or for something I don't cook... And I really see alot of food/fastfood ads on tv or at least that is what seems to be.

There is a commerical, I don't remember if its Allstate or State Farm, but the announcer says, the good thing about a recession is it brings families closer together.

I agree. I think if there is any positive about this economy, families are being reunited. I think we've all gotten too far away from each other.

Nothing like a good, sit down, family meal.

I agree Deb. I think that some good may come out of this recession, if it's only time spent with family. And- maybe kids will have to give up some of the texting and cell phone usage, and carry on an actual conversation.
We got out to a nice restaurant on the weekends and if we don't, I make a homemade crust/sauce/pizza ....otherwise they all starve. :lol:

I actually think it can be cheaper sometimes to go to mcdonalds for families than heat up the oven and cook or to take advantage of those kids eat free places.

Probably, but its not "cheaper" for your health.
I have to agree about the health issue, now that I'm looking at the big 55, I have begun to really look at what I eat and how I want to live and move as a senior...

I understand the appeal to go out and feed the family easy and cheap at places that offer and the kids eat free. I get that mom needs a day off too. What I do is enlist my husband and say, I bought it all, it's easy just do this and you made dinner for all of us...that is one way I will do it. Or I put the main course in the crock pot, with little work and when it's time for dinner I suggest that he put the noodles to cook and set the table.... then give him lots of praise... Or I suggest it's pizza night.... on him

I used to asked every day, "what do you want for dinner" and I always got, "I don't know". Then I got smart and began some general menu planning, did all the shopping and started using the crock pot...

Tonight is curry chicken.... when I get home I will steam some veggies and cook some rice.. essentially boil some water.... and viola dinner is served...

I think Goldie Hawn is behind some dinner at home movement too. not brought on by the recession, but more by familys being together.

We are even sitting at the dinning room table each night where as before it was all about the tv tray and the tv....
The crockpot is the family's best friend!

I also spend time on Sunday's doing some extra cooking for the week, since I work 3 nights a week.

As a kid, we always sat down to dinner together, and when my kids were home, I continued that tradition.

I think its important to keep families centered, and in touch.

Keeping the family centered. I so agree with you. I didn't have kids and I fell away from the dinner table thing for years, I also was big at going out for years. Once we bought the house and our rent to mortagage payment was 4x's bigger, dinner at home really sounded good. However I didn't sit at the table unless it was a special occasion.... Now we do it every night and I take my time eating and stay until my mom is done eating. I have slowed down... I will confess that many times I sit thinking what else I could be getting done.... but you know, sitting, digesting and spending time with the family after dinner is important too.
