I want to make these for dinner but have found so many ideas on the net. Some have eggs and herbs and some are very plain.
Anyone make these... Thanks
Though I heard of it, I didn't know what it was until I just looked it up. I think I'll try it this week!
I chose this one

Gnocchi

3 medium Potatoes
1 Egg
1/4 cup Parmesan Cheese
Dash of nutmeg, salt, and pepper
2 cups Flour
Parm Cheese to taste

1. Boil potatoes.
2. When cooled, remove jackets and push potatoes through ricer, or mash until smooth.
3. Pile the potatoes on a board and make a well with a small bowl.
4. Mix the egg, cheese, salt, pepper, and nutmeg and that mixture into the center of the well.
5. Start kneading the mix into the potatoes, adding the flour 1/2 cup at a time.
6. Let rest 5 minutes.
7. Take handful of dough and roll into coils. Cut coils into 1/2" pieces.
8. Slip gnocchi into boiling, salted water.
9. Cook until they rise to the top, about 3 minutes.
10. Cover with sauce, serve with grated Parm

Lana Torre's Crazy Sauce
1 large can Plum tomatoes in juice
2 cloves Garlic, minced
1 small Onion, minced
2 Tbl. basil
2 Tbl. Olive oil
Splash cream (if desired)

1. In a sauté pan heat oil, add onion and garlic.
2. Fry until light brown.
3. Separate tomatoes from juice and reserve the juice.
4. Cut the tomatoes into small pieces or crush by hand.
5. Add tomatoes and basil to pan. Cook and stir to reduce.
6. Add tomato juice slowly to pan, as it reduces and gets thick
7. Cook about 15 minute.
8. If the mood hits, add a splash of cream at the end.
I just go to Trader Joe's....they make fabulous frozen ones. Mmmmmm

I love gnocchi. It's like eating little pieces of heaven Very Happy
