I can't bake

For some reason, I just can't do it. I try really hard. I follow the recipe. I just can't bake. I feel sorry for my kid(s).

I don't believe it. You seem very creative. I remember saying that and as I mentioned before... I was overmixing or overbaking. You CAN'T go wrong really if you're truly following the directions. :P

That's what I thought, but I AM! I can cook, but I can't bake. Like last night, I made brownies from a box. How hard can that be? Followed EXACTLY the recipe, including stir 50 strokes. Oven was set, timed right. And they weren't good. Hard on the outside, undercooked in the middle. I like undercooked to a degree, but I still like to be able to pick up the brownie without it falling into a gooey mess.
I wonder if it is not you but maybe your oven or pans....
or both. Your brownies sound as to high a temp!!
Maybe my oven is too hot. It's only a year old, so I would think that it would be fairly accurate, but maybe not. *sigh* Maybe I can find a good bakery around here :lol:
Get an oven thermometer. My oven runs about 25 degrees less than what I set it to. And if you use glass baking pans, they require a different temp (cooler I think) than metal. You CAN bake!
don't give up yet. Even Rachael Ray can now bake and she was terrible at before.

Like Paula said oven temp and pans are important.
My oven is new too. but it runs cool. My micro is also a ovven and it is hot.
You lear these things in time.

I have new bake ware that I love!!!!
It is silacone. It comes out perfect.
it flexes easy to clean. no burn spots.
I think when you bake with Pyrex you need to reduce the temp by 25 degrees. I think that's what my mother told me anyway, about 20 years ago. 8)
Deana--are they only for things like cupcakes or do they come in larger sizes for things like brownies?

My mother's philosophy was if you can bake, the rest is easy. So she encouraged my experiments. I was bored in Jr. High School "foods" class where we learned baking.......it was all old hat by then. Still I can flub up greatly, usually because I have strayed beyond the physics and chemistry in baking.........yep, they come into play.

So first get your oven thermometer, make certain your oven is the correct temp before you put in the pans. Learn how to judge doneness in various dishes, but don't keep opening the doors. There's a 25+ degree drop each time the door is opened and depending on the time in the baking process, that could be a disaster.

Remember to keep some instant pudding mix on hand: if it is truly a disaster, cut into small pieces and add to pudding for a quick "triffle." Of course burned doesn't count.
Ha ha. Even I can make things out of a box. :P

I have the silicone bakeware, too. Muffin pans, loaf pans, round pans, 9x13-- you can get any size. It cooks fine but it sucks to clean. It always looks like it has a film on it and if I cook chicken breasts or something like that, I have to let it soak for days to get the chicken goo off.
that is odd I have never had anything stick......
