Last minute Chicken Casserole Recipe

I think everyone has a version of this, so thought I'd post to maybe get someone to make their own version if it's been awhile.

4 boneless chicken breasts (I used 2, cut in half to make 4 ..otherwise, pound them a bit or the cooking time needs to be increased by 10min or so)
shredded cheese (mozz, swiss slices, or cheddar)
can condensed cream of chicken soup
1/8C white wine
1/8C milk
1 pkg dry bread stuffing mix (use 2C)
1/2C melted unsalted butter

Note: you can just use 1/4C milk, but the white wine really brings out the flavor.

Oven 350
grease 9X13 dish.

Place chicken breasts in dish. I sprinkled some mrs. dash over each one, and I think it did need a touch of seasoning but not necessary.

Sprinkle or place cheese slices over each chicken breast.

Combine cream of chicken soup&milk&wine and pour over breasts.

In another bowl, melt butter then place stuffing in until mixed. Then sprinkle over chicken breasts. Press the stuffing into the soup a little or the stuffing will not cook and be yummy. I didn't use all of mine, just whatever I wanted on top of each breast. I could have used all of it though b/c it was so good to eat. :)

Bake 50 min. Enjoy!9

Is that bubbled brown cheese? Yum. Makes a more finished dish. I do this minus the cheese, but just a bit would really add some more yum.

Poor man was hungry. Give him a salad to munch on before the main dish, LOL! We'll have to get you a tabletop tripod for your camera so you can shoot quickly, :wink:
We do this same recipe, but, instead of on top of the chiken, I make a side pocket in the breast, and stuff everything in there. I use shredded cheese, and mix it with the dressing mixture. Then, I mix sour cream, chicken broth and Thyme, and pour over the top the last 20 minutes of baking time. Thanks for the reminder! I haven't made it in quite some time.
I've made a version of this using cream of celery soup (gives it a bit of a tang), and of course, bacon on top. There is no dish that cannot improved by the addition of bacon!

Yum, that sounds good too!!! I love stuffed stuff esp. if there's a yummy cream on top!

I stick mine in the crockpot a lot times too when I don't have time.
Last night for dinner again... yummy!

I use my mom's version using cream of mushroom soup and swiss cheese - put the mushroom soup on bottom of pan the add chicken breasts top with swiss cheese and then top with stove top stuffing. I am really getting hungry now.
