An awesome meatless Indian Chickpeas Recipe

I wasn't sure if I should try this b/c I have to have meat! Plus just chickpeas?? It didn't appeal to me at all, but my need to try new things took over.

(i hate posting recipe pics b/c they look all fussy compared to the real size)

I didn't use potatoes. I used cauliflower to make this a VERY quick prep/cook meal and so we weren't adding another starch. Like super quick. I steamed them until tender then set aside.

I also didn't have garam masala so I used 1/2 tsp cumin,1/2 tsp paprika,1/4 tsp cinnamon,1/4 tsp cayenne pepper,1/4 tsp crumbled bay leaves, 1/8 tsp ground cloves in its place.

* 4 medium potatoes, cubed
* 2T canola oil
* 1 medium onion, diced (i used 2/3rd of one)
* 1t fresh minced garlic
* 2t curry powder
* 2t garam masala
* 1t ginger
* 1t cumin
* 1t salt
* 1 (10.75 ounce) can condensed tomato soup
* 1/2C heavy cream (milk can be used)
* 1 can of chickpeas rinsed&drained

Place potatoes in a saucepan, cover w/water, & boil over high heat. Simmer until tender. Drain.

Put oil in large skillet over med heat. Cook onions until tender. Stir in all the seasonings and must cook for 2 min to bring out the flavors. Then add chickpeas, cream, and potatoes (cauliflower). I mixed on HIGH heat until warm and thicken which was only a few min. Done!

I'd try it!! :D
Sounds good to me. Thanks for the garam masala substitution idea. I cannot find that stuff to save my life but have all the things you put in instead in the spice rack.
Ooh, that sounds really good. How much cauliflower did you use? And did you use the heavy cream or the milk (and if you used the milk, what % was it?)
I used cream b/c I like stuff thick even if it means more calories. My friend used plain yogurt. Any percentage for milk. Mine was perfectly thick once I added the cream (and ready to serve), but I'm sure with the milk ...cooking it for a few minutes at a med-high temp would work.

Mr. J hates cauliflower, so I just eyeballed it and used 3/4 a head and just enough water to cover the bottom of a saucepan, put on high, put lid on, lowered and simmered for about 10 min?? then drained. He didn't taste it b/c of the sauce and liked it. I cooked the jasmine rice in chicken broth fwiw.
This sounds really good. My sister loves chick peas. I'll have to try it and take a plate to her. Assuming there is any left :)
So Jo, is your husband a meat-only guy? I want to make some meatless meals (for economy, ease and health reasons) but Cam 'needs' meat at every meal. Does this satisfy a meat man?
Well... he said it was great, BUT he thinks it would taste even better with cubed chicken in it ;) Next time I was thinking of adding 1lb of chicken cut up while the onion is cooking for 6 min or until of course it's cooked through ...and then adding the rest of the ingred. ;) I actually chose it b/c unlike a "bean" ...these have more of a nutty taste, so it's more satisfying imo. You could always add some tyson already cookied cubed chicken at the end after you've dished yourself some?
