Crock Pot/Slow Cookers????

hello all,

I recently have started using my CrockPot and wanted to know if any one had any recipes for them. I have been sort of making things up as I go and I recently joined a couple Crockpot "groups" to see if I can find anything tasty to make. So far I have made pot roast a couple of times and chicken stew a coupld of times and over the weekend I did Chicken mexican style. Today is a different variation on pot roast... but pot roast can get old... so I'm looking for other ideas that I can make. Also looking for high protien and low carb, so not a lot of noodles and rice stuff....

I left chili in the crockpot when I left for work this morning. you can also make great baked ziti, pasta sauce, BBG pork, stew, stuffed cabbage....
another good one is this

4 frozen chicken breasts
1 cut up onion
1 packette of good seasonings italian dressing mix powder
1/2 cup of water...

cook on med for a few hours...once meat starts to pull, add 1 block of cream cheese, 1 can of cream of mushroom soup, and chopped mushrooms.....

cook for another hour or so...

serve over riced potatoes or regular rice.....

another yummy and favorite one is this one that i made up...

i use lamb but you can use beef...


Lamb Stew

cube 2 lbs of lamb
1 chopped onion
5 cloves garlic

saute meat first so that it gets a good brown..dont cook all the way thru..remove from pan..add onions, garlic and some olive oil...cook till softened...

add all to crockpot...

then add to the crockpot

2 14 oz cans of diced tomatoes
2 cups of red wine
1 can of garbanzo beans (drained)
2 sm cans of tomato sauce
1 14 oz can beef stock

salt, pepper, garlic powder and cayenne pepper to taste...cook on med low for a few hours

an hour before serving add 1 -1 1/2 cups of orzo....watch it though so it doesnt get too thick...if it does, i add more wine.....
We just had a family get together Saturday. I made a very hearty soup/with very small meatballs in it. EVERYONE loved it! the whole pot was gone.

All ingred. are to your likeing.

onion
carrots
celery
canned diced tomatoes
water with chicken soup base.
can of white beans ( great north ones)
1/2 cup barley
garlic to your taste chopped

meatballs
hambuger or ground chicken/turkey
eggs
It. bread crumbs
salt pepper

get the soup started
add meatballs
cook for 2 hours
add 1 bunch kale
andd cook till done to your likeing

as you can see most is up to your likeing
add more of what you like!
If you need to leave put it all together and cook on slow!

Do you always need liquid to cover the meat in the pot? Or mostly? Or not at all? Or just enough to cover the bottom of the pot? I'd love to make some non-stew dishes, but I'm afraid I'd burn things if I left it on low for 8 hours while I'm at work...
steph, if you use frozen meat, it will thaw and usually be enough liquid as long as you keep it on low...i always add a little extra (like a 1/4 cup)...but the key is LOW heat!
A few years ago I bought this cookbook called "Easy Slow Cooker Cookbook"

There are lots of easy and very good meals in it. I will post some of our favs.... :D

Steph - lots of times I've wrapped the beef tightly in foil and put it in the crock pot on low to cook. No water at all. It steeps all day in that tightly wrapped foil and it's own juice tenderizes it. It falls apart when you open it up and you can eat it with a fork - melts in your mouth.

Hmmm, interesting. So it doesn't burn the bottom of the pan since there's no liquid? I really should get my act together and make some crockpot meals on the weekend when I'm around so I don't freak out about burning down the house.
You can also make baked potatoes in the crock pot. My sister does it all the time...

Pierce baking potatoes with a fork. Brush skins with a little Olive Oil and sprinkle them with salt and pepper. Wrap individually in foil and cook on LOW for 7 to 8 hours.

then serve like normally with your favorite toppings.
