Orange Cake with Pineapple Frosting Recipe

You know I couldn't give lil J chocolate for his bday. that would be too nice. :twisted:

I loved this cake. Second time I made it, but the first time was for someone else (used orange segments to decorate). This one is 2 9X13 cakes and with the Lazytown decor (cartoon) taken off to take a pic.

* 1 box of yellow cake mix
* 4 eggs
* 1 t orange extract
* 3/4C oil
* 11 oz can mandarin orange segments W/juice
* 8oz frozen cool whip thawed in fridge
* 20 oz can crushed pineapple W/juice
* 3.5 oz instant vanilla pudding mix

oven 350
Grease and flour your pan. 9X13 or two 9" round

Dump cake mix, extract, eggs, oil, and oranges with the juice in bowl. Beat with mixer until blended. Pour batter into prepared pan.

Bake 35 min or until toothpick comes out clear for 9X13 or 20 min and toothpick comes out clear for 9" rounds

Wait until cake is completely cool then put on topping:

mix pudding with pineapple. then put in fridge while cake bakes to let it set for a bit. then add whipped cream before putting on frosting.


So yummy and delicious!!!!!!!!! ........and light so even my mom loved it!
