Waffles for breakfast (Recipe)

I use 1C wheat flour, so that's why this is a little darker. I also add 1/2-1t of cinnamon too for yummy flavor and sprinkle blueberries on top of batter before I close waffle iron. I only topped it w/more b/c I had to get rid of them, and I had too many.

2 C flour
2 eggs (room temp)
1. 3/4C milk
1/2C oil
1-2T sugar ( i do 2 easily but i like it to be more flavorful/sweet)
4t baking powder (Yes, 4)
1/4t salt
1/2t vanilla

preheat your waffle iron. throw in all ingred. except eggs. then beat in eggs. don't over mix.

spray iron with pam then take out when done.


What makes it good is the blueberry sauce, but since it was just for me and the kiddo, I didn't make it. However, it's SUPER fast and guests love it!

1.5C blueberries
3T honey
1/2C oj
1T cornstarch


mix all but 1/4C of oj in saucepan until it boils. mix remaining oj in the cornstarch then add into the saucepan. stir until thickened, and you're ready to enjoy!



p.s. I still don't have an oven, so there's only so much we can eat.

mmmmmm, beats the EggBeater and dry toast I had for breakfast. Looks lip smacking good!
