Mashed Potato Pancakes Recipe

    2 cups leftover mashed potatoes
    1 large egg beaten slightly
    6 tablespoons all purpose flour
    1 1/2 tablespoons grated onion
    2 tablespoons chives
    salt and pepper
    vegetable oil for frying

    Preheat oven to 250 degrees F to keep pancakes warm.

    In a bowl combine the potatoes and egg well .Thoroughly stir in the flour and add the chives, onion and s and p .

    In a large, heavy skillet heat 1/8 inch of the oil to a moderately high temperature . Hot but not smoking . Fry heaping tablespoons of the potato mixture,flattening them slightly with the back of the spoon for one minute each side or until they are golden brown. Transfer the cooked pancakes onto paper towels on a baking tray. Put them in the oven to keep warm until you are ready to serve. They are delicious served as an accompaniment to dinner or breakfast or serve topped with sour cream and apple sauce .

    They fry better if you keep them small.

We used to have them as kids - I loved those leftover mashed potatos!!
My mom's were crispy on the outside and soft on the inside. Served with butter on top. Where's the YUM emoticon????
Oh my gosh, I'm trying these. Yums!! They sound similar to Korean pancakes which use potatoes too. We have them for breakfast all the time, but they contain other things like squid, kimchi, or whatever you have as leftovers.
Grew up with these, sans the onion and chives. Now will have new additions! Indeed, crispy outside, yummy inside.......as kids we'd eat the left overs cold before breakfast.
Grew up on these leftovers...love them!!
