Pressed Sandwiches with Pesto and Grilled Vegetables Recipe

    2 cups basil leaves , rinsed and dried
    1/2 cup freshly grated parmesan cheese
    1/3 cup pine nuts, toasted
    2 garlic cloves, coarsely chopped
    1/2 teaspoon coarse salt
    1/4 teaspoon pepper
    1/2 cup + 1 tablespoon extra virgin olive oil

    1 red bell pepper
    1 small eggplant cut length wise into 1/4 inch thick slices ( 8 ounces )
    1 zucchini cut length wise into 1/4 inch thick slices( 8 oz )
    1 yellow summer squash cut length wise into 1/4 inch thick slices ( 8 oz )
    Extra virgin olive oil for brushing
    Coarse salt and pepper

    2 loaves Ciabatta bread halved horizontally
    1 pound fresh mozzarella cheese , cut into 1/4 inch thick slices
    1/3 pound thinly sliced proscuitto or ham

    To make the Pesto : Pulse basil,parmesan cheese, pine nuts ,garlic ,salt and pepper.With machine running add 1/2 cup oil to the mixture. Place in an air tight container with 1 tablespoon of oil on top of pesto. Refrigerate.

    Preheat grill or grill pan to medium high. Grill bell pepper until blackened all over. Place in a brown paper bag and let steam for 15 minutes.Peel pepper and discard skin.

    Lightly brush both sides of zucchini,squash and eggplant with oil and grill for 3-5 minutes per side.

    Pull out most of the doughy center of bread and reserve for another use. Brush inside of loaf with oil. Spread pesto over bottom half of each loaf. Top one loaf bottom with grilled vegetables and half the mozzarella. Top remaining loaf bottom with proscuitto and the other half mozzarella. Sandwich top and bottom of each loaf and press firmly.

    Tightly wrap each sandwich with plastic wrap, allowing air to release before sealing. Wrap each in parchment paper and tie with string. Place sandwiches in the refrigerator and weigh down with something very heavy like a dutch oven or cast iron frying pan. Refrigerate overnight or at least 2-4 hours.
