Almond Halibut with sauce Recipe

Meant to post this 2 wks ago, but I've been procrastinating. I go overboard when it came to breading this by doing all sides, but I was cooking this for me and no one else. Another reason why it's sloppy looking because I forgot I planned on taking a picture. I actually had to take a few fillets off for the pic as my dish had a few more because I'm a piggy. For guests, I just bread the top.

Anyway, this has more steps than most of my dishes but this is one that is beyond worth it. It was taken from a 5* restaurant and passed down. I can't emphasize how much I love it and practically lick the plate for the sauce.

* 1/3C white wine
* 2T cider vinegar
* 2T minced shallots
* 1 sprig thyme
* 1 bay leaf
* 1/3C heavy cream (i put 1/2 at least!)
* 8T unsalted butter, cut into T pieces.
* 3T chopped chives
* 2t lemon juice
* 6 halibut fillets (about 3/4" thick)
* 2T oil
* 1/4C bread crumbs
* 2/3C minced blanched almonds
* 1T unsalted butter, melted
* 1 egg, lightly beaten


Note: This is a recipe where it's vital to have everything pre-prepared before starting. A station for the fish, dishes already out, items already chopped, mixed, etc. Trust me... I've made this at least 30 times already!

1. The DIE FOR sauce: In saucepan over medium heat, combine wine, vinegar, shallots, thyme & bay leaf. Boil until liquid has evaporated. Stir in cream (you can't put too much) & boil until liquid is reduced by half; decrease heat to low. Whisk in butter, 1 piece at a time, adding each new piece before previous one has melted completely. Do not allow sauce to simmer or it may separate.

2. Strain sauce through a fine sieve into a heatproof bowl. Stir in chives, lemon juice (i've forgotten this step a million times and it's always been great). Keep warm by returning to original saucepan and put on level 1.

Set oven on broiler setting. Pat halibut dry.

Heat oil and Tbutter in skillet over medium-high heat. Fry halibut fillets for 2 to 3 min on each side, or until lightly browned, and cooked through. Transfer to baking sheet you will use later to put in oven to let cool.

Meanwhile (hopefully you've already done this) mix bread crumbs, almonds. Brush tops of fillets with egg, and spread with almond mixture.

Broil halibut for 2 min or until tops are browned (happens quickly so keep an eye on it). Spoon sauce over and enjoy!
