Figs, figs and more figs!!! I Need Recipes!

anyone have great recipes for figs? My next door neighbors fig tree is going crazy.....

i have just been adding a chunk of blue cheese, wrapping them with procuitto and baking till cheese is soft.....i need some other ideas....

Are you pinching the figs or will your neighbour give you them?? :twisted:

Baked Figs:
24 ripe figs
65g blanched almonds (chopped or slivered)
2 tablespoons honey
finely grated zest of lemon plus tablespoon lemon juice
50ml cognac
2 bay leaves

Spread the almonds on a baking sheet and toast them in an oven for 7- 10mins until lightly golden
Put figs in an earthenware casserole dish
Whisk the honey lemon juice and cognac and pour over the figs
Sprinkle on the lemon zest and nestle the bay leaves amongst the fruit.
Cover and bake in an oven 180"c for 20-25 mins

I also have a recipe for chicken, figs and red wine if you want it?
id love the main dish recipe...

my neighbor is out of town, so i am getting mail etc...she told me to pick figs!!!!! ive given 2 bags of them to co-workers but there are still a half cagillion left!

This sounds very sad but I don't think I have ever had figs before except for in those fig cookies. Are they good? And can you even buy them in the store? Maybe I have been looking over them and didn't even realize it?
2 lbs goat cheese
1 cup figs, sliced
1/4 cup dry sherry
1/4 cup olive oil
2 large Spanish onions, thinly sliced
10 garlic cloves, crushed
3 rosemaary sprigs
2 teaspoons salt
freshly ground black pepper

2 sliced baguettes, for dipping

Preheat oven to 350 degrees F

Crumble the goat cheese into an oven safe dish and set aside

In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking .

Pour the olive oil into a large skillet and place over medium heat. Add the onions , garlic , rosemary, salt and pepper and cook, stirring often for about 10 minutes or until lightly browned. Using a slotted spoon remove the plumped figs from the sauce pot . leaving any of the liquid. Add the figs to the cooked onions , stir to combine and then spoon over the goat cheese. Place the dish into the top half of the oven for 20 minutes, or until the edges are bubbling.

Remove and serve immediately with sliced baguettes and a large glass of wine for the cook !

3 cups figs, cut up
3 cups sugar
1/2 cup lemon juice
1 box strawberry or blackberry gelatin
Combine all ingredients in large saucepan and cook for 15 to 20 minutes. Pour into jelly glasses.

5 pounds fresh figs, small variety preferred
1 1/2 pounds sugar
1/2 cup water.
Wash figs, combine sugar and water. Bring to a boil. Place figs in boiling syrup and simmer one hour, uncovered. cool. Repeat the second day. Third day boil slowly one hour, uncovered. Drain. Place on paper towel and dry in sun for three days. May be frozen.


I'd dry them....there are instruction on the web. It's easy and then you can pop the dried figs into bags and freeze them for use thru the rest of the year. Friend makes fig leather.......fruit leather. Uses a lot of figs and they concentrate into a small size.

Alas, I can't grow them, I just too cold down here by the river......sign.

I also vote for drying them. Then you can enjoy them all year long. :D
