Teriyaki Pork Chops with Blueberry Ginger Relish Recipe

4 bone in center cut pork chops ( to be grilled .)

Marinade :

1/2 cup soy sauce
1/4 cup dry sherry
2 cloves garlic , crushed
1/4 cup brown sugar
2 tablespoons vegetable oil
1/4 teaspoon crushed red pepper flakes


Blueberry Ginger Relish :

1 cup blueberries , coarseley chopped
2 shallots , very finely chopped
1 serrano chile, seeded and minced
2 tablespoons finely chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon lime zest
1 teaspoon minced fresh ginger
1/4 teaspoon salt

To Marinate
, place the chops in a large plastic bag. Whisk together marinade ingredients and add to chops in the sealable bag. Refrigerate at least 2 hours or overnight .

To prepare relish : about 25 minutes before grilling the pork chops combine the blueberries and all the relish ingredients in a bowl and allow the flavours to mingle .

Preheat the grill to medium high . Remove the chops from the marinade (discard marinade )and grill 3-5 minutes per side.


This dish has a unique combination of flavours. Fruity, spicy and fresh.

I don't eat pork but the relish sounds great :)
You could probably use chicken or if vegetarian the firm tofu . I agree, the relish is really delicious and unusual.
