Island Bread Recipe - so I came in 5th place

5th (last) place is still not bad out of the 50 who came! :lol:

my husband thinks I'd love to have married food over him. he says this as we celebrated our anniversary this past weekend. 8)

This is very moist and a nice twist to the typical banana bread. Most likely, you have to actually go get some of these ingredients, but it's all worth it! I gave the extras as a gift to some church ladies b/c they're so colorful and unique. :)

*3C flour
* 3/4t salt
* 1t baking soda
* 2C sugar
* 1t cinnamon
* 1C chopped walnuts (OPTIONAL)
* 3 eggs, beaten
* 1C oil
* 4 mashed very ripe bananas (i just keep the black ones no one ate b/c they're old in the freezer until I'm ready to use)
* 8 oz can crushed pineapple, drained well (be sure to use 8 oz as it tends to not taste as good with too much more)
* 2t vanilla
* 1C sweetened coconut (flaked or shredded kind)
* 1 jar or 3/4C of maraschino cherries diced (usually found next to ice cream cones/dessert toppings)

grease 2 meatloaf pans at 350 for 60 min

or 5 mini loaf pans at 350 for about 50 min

or muffins, baked at 350 for 25 min.

(i'd just check your toothpick b/c I'm not sure how different my oven is from everyone elses)

In LARGE mixing bowl, throw in flour, salt, baking soda, sugar, cinnamon, walnuts, eggs oil, banana, pineapple, vanilla, coconut & cherries.

Mix by hand only until fully mixed.

Pour batter evenly into the prepared pans.

Cool completely before taking out and be sure you greased well.

Hint: about bananas. Often our grocer will put out a large sack of ripe and bruised bananas at deep discount. I peel them and freeze them until I'm ready to make a large batch of banana bread. Then thaw and puree them.
My husband mentioned that to me, but I had never noticed them. Guess I have to look closer!! He gets upset when he sees a few extra bananas and I tell him "don't touch!"

George, I never thought of freezing them, I always seem to have a few that need to go into the garbage, ( what a waste). NO MORE.
