Chocolate Mousse Cups Recipe with picture

My son is trying to impress his girlfriend with his cooking and asked for a choc dessert recipe. This recipe looks difficult but isn’t. This recipe is an adaptation of a recipe I found on FoodNetwork.com. I just made it easier for his sake.

6 oz semisweet choc, melted (more to be safe)

2 T water
¼ C sugar
2 eggs, separated
3 T brewed espresso, warm (optional)
2 T Grand Marnier (he’s actually not old enough to buy this but…he’s in college)
4 oz semisweet choc, melted (buy a bit more just in case)
1C heavy cream

Wilton silicone cups. (These were on sale at Michael’s –baking section $5 for 12)
They are diamond shaped and look like cupcake liners.


Chocolate Cups: melt 6 oz semisweet choc in microwave in intervals of 15-20 seconds at a time stirring in between. Spoon melted choc on the INSIDE of silicone cups. Turn upside down on a plate and refrigerate to set choc. If you made the walls of the cups too thin, repeat process and refrigerate. When the choc is firm carefully peel off the cup. These silicone cups really made it easy. Set aside.

Combine the water and sugar in a pot and bring to a boil. Simmer for 5 mins to create a simple syrup. Cool slightly.

Whisk in egg yolks until light and foamy. (Remember that the syrup has to be slightly cooled or your yolks will cook and turn into scrambled eggs). Add espresso (optional), Grand Marnier, and melted choc.

Beat the egg whites until soft peak, reserve. Whip cream until soft peak and add egg whites and melted choc mixture. Whip in Elec mixer until solid peaks form. Spoon mixture in choc cups.

Optional: Drizzle with caramel or choc sauce. I also added strawberry jam to garnish the plate.

Chill for at least 3 hrs.

That looks so awesome and yummy!!! Oh my gosh, I could bathe in chocolate mousse.
I'd be very impressed with my boyfriend if he served that for desert. :D
I'll mail him the silicone cups and he'll have to let me know. My boys are great in the kitchen. For Prom they always got a group together and cooked at home instead of going to a restaurant where they felt awkward all dressed up. The girls did like a guy who cooked.
