How do I know how to determine her color for registration?

Does anyone have pics of the difference in a blue, blue white, gray, etc.? I am not sure how to tell for the purposes of checking the box on registration papers for akc?

You'll be safe to put gray, it'll definitely be some shade of it! When a pup is young, there's really no way to tell what shade of gray that it'll be when it matures-- plus some mature much later than others.
I would guess you need to put the color the pup is now, black and white.
No - not the puppy color of black and white. You need to put your best guesstimate of the color as an adult. :D
If you know what the parents are, that may give you a clue. Otherwise, just use the gray and white option.

Is there a chart of the genetics of coloring for OES that helps you know what color your dog will end up? I haven't been able to find one.
I don't think there is one. It's not as simple as the regular genetic determination of dominant and recessive because you can get so many mixes and crosses; the variables are too many.
I know that one of my breeders tends to mark all of her dogs blue and I think it's because of a status thing. Sounds too much like blue bloods!

When in doubt, put grey. It's the safest bet.
All oes are genetically black and white. Then there is the greying gene, which is why they change color.... how dominant that gene is can determine how light or what shade they become, and grizzle is genetically a black (BB) plus irish white spotting (sisi) plus greying (Gg) plus agouti.
They all become some shade of grey though, but I do love that pigeon blue color that we see on occasion.

In siamese cats they are born pure white and acquire their points later, anything from seal which is almost black to a light cinnamon color which is simply a dilute twice of the seal. There are other point colors, but to keep it simple I stuck with seal. Their color change is also actually affected by temperature. The colder the environment the darker the points.

Lipizzaner horses are born dark and take about ten years(I think) to turn pure white (if they were black or grey)

Dalmations are born pure white also and acquire their spots as they mature.
