Great side dish that is a crowd pleaser...Corn Pie!

Katherine's Corn Pie ( I won a contest with this dish )

Use as a side dish . I often serve it with pork or ham or add mexican spices etc and serve with enchilladas . Double and take to a family dinner or pot luck

3 large eggs
1 10 oz can creamed corn
1 12 oz can corn kernels- drain liquid
1/2 cup melted butter
1/2 cup yellow corn meal- do not leave out it effects the flavour and texture
1 cup sour cream
1 cup shredded old or medium cheddar cheese
1/2 tsp each salt and pepper

Beat eggs well add remaining ingredients and stir until full combined and well blended. If using beaters beat 30 sec to one minute . Place in a well greased pan ( use any size or style but corningware or pyrex work well )

Bake @350 degrees for approx one hour.

This recipe doubles easily !

I've made this before and the guests gobbled it up. Everyone loved it but Mr. J. He's very picky! Glad to see you post this. :)
I've made something very similar to this before, too. It's a great alternative when you're looking for something different to serve. :D
We have a Corn Pudding recipe in my family that has been a favorite for years...almost the same recipe. :D
I make basically the same dish but throw some chopped green and red peppers in, give it color and a little zing.
lol..i do something similar too, but i add green chilis too it..... :D
I add the green chilies and if I'm feeling lazy I use a box of Jiffy corn muffin mix on top.

Darcy, them "easteners" just wouldn't understand green chile addiction. Actually I'd add the green and probably make a red sauce to go over the top for color......or a good salsa.
i add green chilies to just about everything...either that or jalapenos.....yummmmmmmmm

tonight for dinner is marinated chicken with green chilies and pepper jack cheese over it......mashed potatoes and a corn salsa......

Wish my husband liked spicy things more like I do. I'd drown everything in cheese and onion if he let me.

I'm actually going to make corn casserole sometime this week. thanks to the original poster for suggesting it. It'll go great with my crockpot roast beef.
