Valentine's Day Dinner

Anybody cooking a special meal for their SO? If so what? & please share the recipe.

I'm thinking grilled sirloin sliced & drizzled with Parmesan Peppercorn sauce, roasted garlic & rosemary potatoes, grilled asparagus and chocolate/cherry/almond bread pudding for desert. :?

But, I'm open to suggestions. Any yummy ideas? :D

i'm making pork with yummy raspberry sauce drizzled over and potatoes since mr. j loves to use the sauce for everything followed by some cookies i ordered with joshee and lil j's picture on them.

the important question is, what will you be wearing for your special evening? ;)

I have a different dilema. Thursday night is Marley's agility class (and valentine's day) DO I skip class and cook dinner - hmmmm.

depends on your husband. mine would choose doing something dog-related and call it the NOST romantic evening EVER over dinner and me as a dessert :( :lol:

this year mr. j just has to be happy with his beautiful uprights as a present b/c he can't get dessert for valentine's or his bday this thurs since I just had a baby. :evil:
I want the parmesan peppercorn sauce recipe and the rasberry sauce recipe too!!
Here's mine, but I honestly think it tastes better using the sauce on some grilled/fried/baked chicken. We just have chicken a lot, so I'm sticking to the pork this time.

Parmesan Peppercorn Sauce

2 Tbsp Zesty Italian Dressing (can use low fat version if you want)
1/3 cup sour cream (can use low fat or fat free)
4-5 teaspoons fresh grated parmesan cheese
Fresh ground pepper to taste

Whisk to combine & refrigerate until served.

Marinate the sirloins overnight in the same Zesty Italian dressing.

Heat 2 tbsp of dressing in a large skillet on medium heat & saute 1 cup thinly sliced onions 7-8 minutes or until golden brown. Remove the onions & set aside.

In the same skillet, cook your steak (after removing from the marinade, of course) on medium heat for 3-4 minutes on each side for medium doneness. Place on a cutting board. Slice crosswise into thin strips. Serve steak topped with onions & sauce.

I haven't made this bread pudding yet, Jo, so I can't vouch for how it tastes. But it sounds good and I like bread pudding. Wonder if he does. :? :lol: :lol:

Chocolate/Cherry/Almond Bread Pudding

Ingredients

4 large egg whites
4 large eggs
1 cup skim milk
1/2 cup sugar
1 T vanilla extract
1/2 t ground cinnamon
4 cups whole-grain bread, crusts removed, cut into 1 inch cubes
2 cups pitted cherries, fresh or frozen (thawed)
3/4 cup semisweet chcolate chips (preferable mini)
1/2 cup sliced almonds, lightly toasted - divided

Cooking directions

1. Preheat oven to 375 F. Coat an 11x7 glass baking dish or a 2 qt casserole with cooking spray

2. To prepare custard: whisk egg whites, eggs & milk in a medium bowl. Add sugar, vanilla and cinnamon: whisk to combine.

3. Toss bread, cherries, chocolate chips and 1/4 cup almonds in a large bowl. Add the custard and toss well to coat. Transfer to the prepared baking dish and push down to compact. Cover with foil.

4. Bake until the custard has set 40- 45 minutes. Uncover, sprinkle with 1/4 cup almonds and continue baking until the pudding is puffed and golden on top. 15-20 minutes more. Transfer to a wire rack and cool for 15-20 minutes before serving.

Yields 8 servings.

why yes it is Ginny!!!! after this i will be officially 3/4 of the way done.....only one more after thursday.....so i guess its not only a fantastic valentines day.....but ''there is light at the end of the tunnel" valentines day!!!

we need to start making bets on what color and consistancy my hair comes back in...lol.......

My husband would love if I got into something special. I'm a tshirt and sweats girl... every night. Getting into something sexy means I wore a shirt that was fitting and put on some sexy underwear. Otherwise, it's adult powergirl undies that have the days of the week on them (at least while I'm healing).

LOL Maybe you should try something different for V-day. :wink: Mr J really seems to like the t-shirt and sweats. :lol:

All I know is I'm make raspberry genache pie for dessert. I'll work backwards from there.

As for what I'm wearing....it doesn't matter, he'll be asleep in front of the TV before 7:00.

It's OK, lately I've actually beat him asleep in front of the TV :lol: Dogs hae to nudge us to let them out for "last call."

I now know what the main part of the meal with be.......lamb, Duh! Now have to decide whether to roast whole or cut up and do something else. Shish kebobs.....I think a little open flame in the house out to be romantic :wink: Can't forget the flaming cheese !

Got my own flowers today too. I have to make 12 arrangements Friday for a luncheon so needed a little practice before hand. Of course I used more flowers for myself than they will get!

Since the dessert will be chocolate genache pie.......that leaves him with either getting me diamonds or a card..........I can only dream. (I'm sitting here shopping on line for a used truck for him......his is close to death)
Just a report.........I feel awful this a.m. Too much good food I guess.

The lamb was perfect. Dogs were very interested but had to wait until dish washing time to get their share. Salad was a "weed" salad...all the various weedy looking stuff with a raspberry vinegrette and walnut and blue cheese, orzo pilaff and that chocolate genache pie (which became mint, not raspberry as I didn't have raspberry jam or liquer in the house) and of course wine. Pie piece was itsy but still too rich for this diabetic...not that the wine helped either.

And yes, I promptly fell asleep in front of the TV before Paul had the dishes done. Of course he gets the title :hearts: cutie for the diamond stud earrings that came in the little black box earlier in the day.
Dinner sounds delicious! Bravo to Paul for the diamond earrings. Well done. :clappurple:

Our dinner was nice, too. I ended up grilling ribeyes and having boiled shrimp, the roasted rosemary & garlic potatoes, green beans & bread twists. I baked a lemon pound cake, which turned out really well, too. Yummy. :D
I got chapstick and sugar free twizzlers for V day, what a ROMANTIC that Dougie is!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Course I saw him all of about 20 minutes as I dashed in from work and out to class. My V day dinner was a chocolate milkshake and an order of fries from Micky D's :roll:
Oh my, earrings sound so nice. :hearts: I just got a card and membership to Costco. The second sounds stupid to anyone else, but I've never been in that place yet I'm the biggest grocery hoarder and coupon person that I've always been told it's the place for me. ...anyway, it was cute.

As far as eating: The meat turned out sooooooo tender b/c I simmered it for so long and the raspberry sauce is always delish. I made it with green beans mixed with walnuts, red potatoes, and strawberry pretzel salad for dessert along with these really cute cookies I'll have to post a pic of (printed off pic of all the boys on edible paper).
What's strawberry pretzel salad? That sounds good!

I had started making pot roast on Wed but it wasn't done in time so I finished it last night, while I made myself a piece of salmon and roasted brussel sprouts, mmmm! And bought a few chocolate covered strawberries. And I got a nice card that Cam filled out while walking it towards me :roll:
